The village of Saint Hilaire is famous for being the place where the first sparkling wine in the world was invented. The monk Don Perignon was taught the method by the monks of the Abbey and he successfully began to make his own version.....champagne. Blanquette, the sparkling white wine of the Languedoc is made locally and wins gold medals every year. There is also white wine and a red wine AOC at the Rothchild's vineyard two miles to the east.
There is a local train to the mountains, south, and to Carcassonne to the north. This train connects with the TGVs to Narbonne, and Toulouse. The 'Deux Mers' motorway is fifteen minutes north which takes you to the beaches of the Mediterranean in 35 minutes
