Marlin Bill's is an unpretentious bar and restaurant that doesn't try to be anything other than a nice place to get a great meal with a killer view of the Pacific. At various times of the day you'll find locals mixed in with visitors in the restaurant or at the bar watching a game, and a couple of pets and local animal friends.
Bill's is not a Tico restaurant. Don't expect a lot of theme and branding. That's not what they're about. They have an eclectic menu of ribs, steaks, chicken, fish, pasta, burgers, salads and a cerviche that changes depending on what fresh seafood they have choosen for the day. Portions are generous and Bill has been lucky to find a chef that has been with him for 4 years and consistently delivers a satisfyingly delicious meal.
Bill always comes to our table to see how are doing and takes a genuine interest in ensuring we are happy with our meal. Don't be afraid to ask to customize your order. The staff has many times taken our request for something special.
We don't need rant about a place like Marlin Bill's, we just go back time after time because we've never disappointed.

We ate here twice... Good variety of food on the menu but pricey... Not skimpy on the alcoholic drinks... 2 will just about do it. Hard to decide which one to get.... Rum runner or the margarita ... Rum runner

Margarita's, Cold beer and great key lime pie! We enjoyed the atmosphere and location. Not cheap but a nice break from the usual fare.

We had a margarita, an Imperial beer, the New York Strip and Corvina as entrees with Salad, veggies, rice and fries. The Key Lime Pie was homemade and delicious! Waitress Angie was incredible, attentive, and polite. Would recommend this place!

Went last evening. There was a patron -seemingly a regular---there with a barking dog running around the restaurant, one of those yelpers that makes you jump out of your skin each time. I don't care that the dog was there, but the yelping was obnoxious.

The waitresses were hustling and seemed to do a bit of everything. Hubby waited for at least 20+ mins with an empty beer glass and just gave up and got a refill at the bar. Who I assume to be Marlin bill just kind of stood around doing nothing. If you've ever watched the show bar rescue, this could have easily been an episode.

Our food was meh at best-I got the fish blackened and the hubby got some beef dish with jalapeños that was not good at all. We paid 60 usd for this + 3 beers.

Oh and the best part, he gives himself a nice exchange rate when you pay in USD.

Not recommended at all.

I am so sorry your experience with us was less than satisfactory, and wish you had brought it to the attention of someone in management. We work hard to see that our guests' experiences are delicious and enjoyable, and would have done everything possible to make your visit right. Dining al fresco with pets is a local custom in Nosara/Guiones, but we never want to sacrifice one guest's comfort for another's canine companionship, and would have been happy to ask the other guest to quiet their dog if you had brought your discomfort to our attention. Marlin Bill's has long been a favorite of both locals and visitors, and we received a 5/5 rating on the same day as yours, so I would like to assure you that your experience is not our norm. If you're ever in the Nosara area again, we would love to show you what a typical Marlin Bill's experience really is. Until then, safe travels! Pura vida!
