My friend and I were here for the first time... Being in the food service industry for over 40 years and have eaten in many areas of the U.S. I have to say some of the most enjoyable food experience of this ethnic flavor. The menu was very varied from chicken to seafood to steaks all prepared in their own special way. The decor was quite unique but very pleasant. The host was very pleasant. Our waiter Mitchell was very good both the host and the waiter were very new to their positions and will be very excellent when they have some experience under them. The only negative is that for this type of upscale restaurant, the manager should make the rounds to see how the customers enjoy their food... We will definitely return ....Great Job Fuego's.....

We stopped here for lunch mid-week and apparently many others had the same idea, so the kitchen was a little overwhelmed and slow, but it was definitely worth the wait. We had the quesadillas, the guacamole, taquitos, empanadas. Everything was absolutely delicious. The wait staff was very sweet and helpful. Great find in Madison!

Four of us went to Fuegos during restaurant week, so the full menu wasn't available but still there were varied options. We had reservations, but part of our group was running behind. We never got the impression that they were put out by this. We waited at the bar which seems to have quite a drink menu. The grilled pineapple margarita was just a bit tarter than I liked but still good. They have many choices of margaritas such as traditional, melon, berry, mango, and arbol pepper ( usually $6) for $4 at the tune we were there. A group member enjoyed the traditional one. There were several wines and beers/ales as well as tequila and agave which could be purchased in flights.
We were seated for dinner and were given both the Carnivore menu and Vegan menu.

Each of us tried something different for appetizers and entrees. There was a seafood bisque, plantains, and something that reminded me of falafel---little fried, crisp balls with soft, tasty filling. These were called garden globes. One entree was beef tongue with nopalitos (cactus) and saffron rice. The beef was cooked right and was not to rubbery.
Husband had steak with jalapeno smashed potatoes. He said the steak was very good so believe it as he is choosy about his meat. I tasted the potatoes and they packed a little heat. The chicken with chimichuri was tender and fairly flavorful served with plantains. Lastly, the only vegan entree was a cauliflower "filet" which was 1/2 a head grilled that had great seasoning. It was served with grilled onion and pepper wedges as well as half a sweet potato with the skin caramelized from the grilling. Yum. Desserts were good. There were tiny carrot, chocolate and banana cakes. The best dessert was a fried tortilla with cinnamon and sugar drizzled with carmel and served warm with vanilla ice cream.
Service was a little spotty but we were enjoying the company of each other so didn't notice that much. None of us were disappointed with the food. Would go back to see what's on the full menu

It's restaurant week and they are on the list! Came for lunch and was given a carnivore menu and a vegan menu. We decided to try a set of dishes from each menu.

This place is really cool. I love the decorations inside including a net of light bulbs above your head. Let's hope the net is securely fasten to the ceiling no need to additional flavor in your food.

For appetizers, we had salad and gazpacho. The latter has a nice kick to it.

For entrees, we had the Mexicano burger and the vegan tacos with spinach and mushroom. Let me say, if you have not tried vegan dishes, you have to try the tacos. They were very delicious. Makes me want to have vegan here on. The burger meat is very dense and watch out for the jalapeños.

For desserts, let's just say the sample plate does not do them justice. Actual desserts were beautifully decorated and presented. We had the chocolate cake with berries glaze and a mango / coconut flakes cake topped with whipped cream and pineapple. The desserts are all vegan. Definitely try some.

Try them this week at Restaurant Week in Madison.

They must have been short staffed as they asked to wait at the bar for 1/2 hour, but it was worth it. The bartender made margaritas from scratch without simple syrup on request. They sat us at a table of our choice and the casual atmosphere overlooked a small outdoor patio area where some dude was doing Yoga poses??? Crazy and it wasn't even sponsored by the bar - lol. People have no sense of spacial awareness or how to act out. Well, it did give me something to write about. The tapas are recommended and the service was great!
