I loved the shredded beef taco and the cheese enchilada. The beans, salsa and guacamole were great as well. I highly recommend Mi Pueblo!

We stopped after a day in Zion. It was about 30 minutes before closing and the restaurant was almost empty. The waiter was very attentive and we did not feel hurried even though the placed "closed" while we were there. We were served freshly prepared food and given time to enjoy it. They made us feel glad we had stopped in. It was a good choice for us.

This restaurant offers the staples of American Mexican food - tacos, enchiladas, tostadas, etc, with beans and rice. Nothing revolutionary, nothing surprising, it's very standard fare. I've eaten Mexican food in many different places, and the main problem here (other than the lack of adventurousness) is that the food is underspiced. Cedar City has a lot of young families, and the Mexican restaurants tend to make food that young children will eat. Fortunately there's usually a bottle of Chalula hot sauce on the table, but the food would be a lot better if the spice was cooked in instead of applied at the end.

Great place! Sunday night can be tough to find a late night dinner in Utah. Even worse if you want a beer. Mi Pueblo is open until 10:00 PM everynight.
