First-timers, you will love Fogo de Chao. With the gaucho dressed servers bringing different skewered meats to your table and the nice variety of vegetables, fruit and cheeses to serve as one chooses, it is a real dining adventure. Anyone who has not been to this restaurant needs to see what the Brazilian experience is all about.
Once you are seated, one of the first things that you will notice on your table is the red cardboard disks that look more like drink coasters. Keep the red side up while you enjoy the many choices offered at the extraordinary salad bar. When you are ready for the main entrée, simply flip the disc over to the green side up and watch how the servers bring a variety of skewered meats to your table. They will keep them coming as long as your disc is green. Once you’ve had your fill, flip the disc back to the red side up and the servers won’t bother you.
While I recommend tasting most of the meats offered by the servers, one can specify a preference and they will grant your request. If you only want a juicy tenderloin or filet that is cooked medium-rare, they will limit the meat to your preference. If you find the steak to be too salty (they use large amounts of large granule salt), you can ask the servers to bring your selection without any salt and they will do so.
An improvement Fogo de Chao could make to enhance the dining experience would be to expand the number of hot dishes. Although the fried yucca and mashed potatoes were tasty, they just weren't enough.
Fogo de Chao is a dining adventure that everyone should try at least once in their life. Make sure that you visit while you are hungry, because the food is endless if you have a large enough stomach.
