The food is good,steaks cooked properly, service is good,decor sets the stage for upscaled pricesand extremely overpriced bourbon and scotch, although their selection is nice. The only reason this place has the reputation it has is due to the lack of competition in College Station.
If you have been to a real city with options then you know College Station isn't one of those places. That being said, why am I paying Dallas,Austin,Houston or New England pricing in College Station for something not in Dallas,Austin,Houston or New England? Why are there better and less expensive/priced similarly places with much better views and beautiful atmosphere with weekly changing culinary offerings from top regional chefs out there,yet when you get to College Station people think places like this are amazing as if they forgot real civilization exists?
It's not the Republic's fault, and I have nothing bad to say about them at all aside from their bourbon and scotch pricing,which is not that far off from just buying a bottle secondary or in some cases more than that, but in comparing it to places in their "league," it is an average upscale fine dining restaurant,so unless it's a bad fine dining establishment,it should get 4 stars, but in no way does it come close to deserving 4.5 or 5 stars if held to the standards of true fine dining.
As trip advisor does not do well in sorting out the difference in those standards that seperate fine dining from other nice restaurants ect. in my opinion, it needs to get 3 stars to reflect what I'm trying to truly rate it and why.
If you're gonna drop the kind of money on a meal this place thinks it deserves, save it and go somewhere you will find more than 3 places that have pseudo to legitimate fine dining establishments to choose from. If you don't care nor have the time or desire to wait until you find yourself in cities or towns with actual options, or are truly stuck here because your visiting a student or a constantly disappointed football fan, then eat away because after all, "It's really good for College Station." Just remember that means it's probably decent to above average in most places that have real options.

We had taken another couple out for a special evening to The Republic. It was as a busy Friday night and our waiter seemed elusive. At the end of the evening we had to wait for our check. During this time, another staff person came to our table and asked us to please hurry and move along. They had others waiting to be seated. We explained that we would love to move on, but were still waiting on our waiter to return our credit card! It was very odd. They never apologized even though it was totally their fault that we took so long. We will ever return.

Friendly staff, attentive waiters, good food. The filet was done perfectly and seasoned great, served with four different steak sauces but it was also great all by itself. The calamari was very good also and came with good sauce as well. The brussel sprouts were a little underdone but had great flavor. Desert was great we had the apple french toast with ice cream and the staff wrote Happy Anniversary on the plate for us, very nice touch! The drinks were also done right, we had martinis

I thought I was going to hate this place. We boys in the family flew in for the A&M/UNM game with reservations here for 8:45 Friday night. They were PACKED. No table, no room at the bar, no nothing. But the hostess staff moved heaven and earth to get us seated. They could not have been better.

Our waiter came out and got everything going from there. He was simply the best. The bar staff made sure we got a couple of wonderful bottles of wine at the lower end of their wine list.

The food was so good that it"s hard to do it justice in print. We split an artesianal cheese plate and steak tartare. Five cheeses, all kinds of wonderful accompaniments (the bacon jam is delicious). And the tartare was the best I've ever tasted. For entree the guys had the filet and the pork (wow, that pork was good), and loved them. I had the chicken-fried FILET (of all things) and it was marvelous. I'd order it again and again.

Then dessert, after-dinner drinks, and we were out the door with one of the best dining experiences imaginable. This is top notch fine dining, boys and girls.

The Republic is the best restaurant in the Brazos Valley! The service, food and atmosphere are all top,rate. The Short Rib dinner is so tender and delicious. Served with a cauliflower mash that is very tasty. A must try! All of the steaks at The Republic can't be beat. Very moist and tender.
