Description: How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, just opened at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

Delicious and above-par steaks. Portobello mushroom fries are interesting and tasty. The service is good. The atmosphere is sophisticated and elegant casual. Very high quality experience. Perfect for a business dinner, romantic date, or birthday gathering. Tivoli is a great place to hang out in, too (which is where Echo & Rig is located). You should make reservations. Stop by the butcher shop sometime on your way home from work, too. They used to have bone broth, which was unique, healthful, and tasty. But they are receptive to what you say you want.

We loved Echo and Rig the first time we ate there, so made a point of returning. Still very good, though the ambience inside is not as enchanting as the outdoor balcony. Steaks are their specialty, and the best bet. Lots of interesting appetizers/small plates. The steakhouse salad was a bit of a disappointment, rather small, with 4-5 small slices of beef, not much more than an ounce or two. But it was tasty, and good if you want something light. Desserts are ice cream sundaes, interesting combinations, although they are a huge quantity of ice cream and relatively light amount of topping. Our server was good, but the busboy needs more training – he seemed very anxious to remove things from the table too quickly, asking if he could take the bread away before the entrees came. We said no, but in the meantime he had already grabbed my bread plate and butter knife, and left with it anyway. Then he cleared my plate while my husband was still eating, and tried to take his plate before he finished the last bite.

I have frequented Echo and Rig for several years. I can say that they consistently serve a great meal ( yes any restaurant can make a mistake and this includes E&R). Frankly as it has become more popular the reservation times is approximate- as much as 15-20 minute additional wait, suggest you plan accordingly.
The menu is limited which to me is s good thing. Entrees are limited to about 8-10 items (ala carte). Their lamb or butterfish are among my favorite. The “sides” offered feed 2 very hungry guests up to maybe 4 with more limited appetites. Two sides easily feeds 4-6. Recommend the cauliflower.
I usually ask to sit outside on the balcony ( the bar and their butcher shop is on the 1st floor, restaurant on the 2nd). The main indoor seating area tends to be quite noisy, the balcony much quieter, with views of the Tivoli shopping plaza, and heaters/ misters to condition the temperature. On really windy days I don’t recommend the outdoor seating.
Service is very good, friendly and professional. A supervisor will check in during the meal to see if all is ok, and will attend to any reasonable request.
Enjoy a good time that is also kind on your wallet.

This is a steak type restaurant yet it is also a butcher shop where you can buy the finest cuts of meat. The food at this restaurant is excellent. You can choose to sit on the patio overlooking Tivoli Village in Summerlin or eat inside. I had some non-meat item which was excellent; other people in our group had steak and raved about it.

This was our second visit to this Tivoli Village spot for brunch. We will definitely return as our meals were excellent once again. The portabello fries are a must! The short rib hash never disappoints and the salmon benedict is delectable. The Farmer's Market plate showcases the farm to table aspect beautfully. Our server Adam was outstanding. He is not only informative but attentive and delightful always with a smile
