If you are looking for value look no further. GM Dylan and staff give you a flight of three generous pours of good wine (red, white or rosé) for $20. The tapas on the menu are also first class. We can not recommend highly enough the endive with orange, goat cheese and micro greens. Definitely a recommend!

Highly recommend this restaurant to both those who are new to tapas, and the more experienced palette. If you are new, the classic dishes like the potato confit torta and patadas bravas are a good place to start along with some charcuterie. For the more adventuresome, there are some unique dishes abundant in bold flavor combinations. Every dish we tried was very good, but the lamb chops were outstanding. Didn’t get to the braised rabbit but we were tempted.

The only dish we weren’t crazy about was the octopus - the preparation here is that it is simple simmered for 2 hours to tenderize it (and it was very tender) but we prefer to be seated on the grill after braising to crisp the outer skin. Just our personal preference.

The sommelier and wine list are very good. You don’t have to spend a bundle on wine unless you want to or your on the expense account. There are good options in the $60 price point and the sommelier is happy to help you select one at any price if you are unfamiliar with Spanish wines.

My wife and I travel to Las Vegas several times a year and since we both love Spanish food, we have tried several Spanish food restaurants in Vegas. Our favorite, by far, is Jaleo in the Cosmopolitan. The food, the wine, mixed drinks, ambiance, and service are all excellent. The large, paella pits that greet you as you enter the restaurant set the tone for a wonderul dining experience. I am going to butcher the entries we like because I don not speak Spanish but we love the Spanish toast with tomato, the egg with chorizo, and the seafood paella. One of our favorite waiters, Daniel, stopped by our table to say hello. Travis was our waiter for the evening and he was excellent. We sincerely appreciated Michael, the Manager, stopping by our table to say hello and to being us a Spanish ham and cheese sandwich he is thinking of introducing.

Jose Andres excites the palate and delivers superior service. From the moment you walk into Jaleo until you leave everyone is friendly and helpful. We never needed to wait for any help.

Every plate of tapas exceeded our expectations. Flavors exploded from each dish with hints of fresh herbs to powerful paella spices.

Jaleo is culinary escape that needs to be part of every Vegas visit.

My friend wanted to try this place because of the chef, so we made a reservation and had dinner here. Faced with all the menu choices, we opted for the tasting menu, 12 dishes (my friend took hers paired with wines). They were all good! Some were even great. And the dessert was divine. The dessert was olive oil ice cream (!) with grapefruit. A wonderful end to the whole experience. And so much food! We were still full the next morning. Our server, Paula, was wonderful and friendly.
