After moving to Boise from Portland, Oregon in 2001, I thought I'd never find a decent Indian restaurant in town. I tried a couple of existing Indian places over the years, but either the service was horrible or the food just wasn't up to par. Recently, the Bombay Grill has really come into its own with the best Indian food in the Treasure Valley; the lunch buffet is where it really shines. The spicy heat in the buffet food isn't watered down for the masses; the lamb vindaloo packs just the right amount of punch, and the mango chicken and chicken kashmir bring the heat as well. The vegetarian items are very flavorful, the tandoori chicken is never too dry, and the gulab jamum is never too sweet. I recently brought a friend from work who had never had Indian food and was always a bit "scared" of it, and now she's a Bombay Grill addict. The head chef is very friendly and will often come out and say hello to repeat visitors. The location inside the ancient Idanha Hotel (haunted, by the way) lends an unusual ambience. Highly recommended.
