The Yangtze River Delta comprises Shanghai, JiangSu and ZheJiang. These three areas have certain characteristic dishes that are well known pre-war, now getting some come back but much in need of proper initiation to the rest of the world. Take the reeve shard, for example, it is a Yangtze River fish, steamed with Shaoxing white wine with ginger and sometimes Yunan Ham. Fragrant but very bony. Foreigners need to be initiated to the fun of getting to the most delicious flesh without getting all worked up by the bones. This restaurant can do better in this regard.
