Vinegar poached mackerel sushi is a traditional Japanese treat and it's particularly difficult to get right. Mackerel sushi is not as popular as other fish perhaps for that reason. The fish must be fresh and the ratio of salt, sugar, and vinegar has to be right. Kyo Asahi-Ya is famous for being one of the place that does it right. They pick the best mackerel which you can tell by the texture. However for the price I expected more. It was very tasty and worth trying but it'd be a one-time purchase for me.
