Agava restaurant has ambitions. I wish them to fulfill them although it is by no means guaranteed. There is one brilliant standout though! It is their "three stars" sea urchin and porcini mushroom risotto. On my last visit it was fabulous, well executed rice cooked most likely in a light mushroom broth, laced with perfect sea urchin roe and succulent thick porcini slices. One of the best dishes I had in my home country. There was a good choice of vines by glass to accompany our lunch. Congrats, I'll be back and I hope you get more ambitious and more relaxed in the future.
