Lechon (whole roast pork): used to be the best lechon ever to me before but after my second visit, not anymore. Fore some reason the lechon is tougher now. Hope this lower quality of lechon is one of. And price also increased from 280 pesos to 350 :(

Puso: still the yummy rice cooked in coconut leaves. Best paired with chicharon.

Chicharon (pork crackling): still very very good. Very crunchy and tasty. Basically it is eat all the chicharon your heart can take. So be very careful.

TIP: when you are not into the healthy lechon (meaning all meat not fat) make sure you tell the person who chops the lechon not to add the very lean meat part (usually the pork hind).

For me the perfect lechon is 70% lean pork, 25% pork fat and 5% crispy skin :)

I am from Iloilo and currently works in Manila and have tasted so many lechon in my 30+ yrs of existence and I must say Carcar lechon is the best! I will never eat lechon the same way again! Once you arrive in their market get inside and ask where the lechons are, Cebuanos are extra friendly so don't hesitate to ask for help. The price of the lechon is 350/kilo. Super cheap! Lechon vendors will give a free taste of their lechon and its up to who would you choose. You can eat in the carenderia beside the lechons just order one viand from them. The meat oftheir lechon is so succulent and tasty unlike other lechons, bland and gummy. OMG I will never forget the feeling when angels came down from heaven when I had my first bite of the famous Carcar lechon. Divine!

After years of trying, I was finally lucky enough to have the chance to go to the unofficial home of Cebu's lechon in the markets of Carcar, a city about 1 hour away from Cebu City.

Here, one feels like he's in pure cholesterol heaven surrounded by perfectly roasted whole pig with crackling which is around 50% cheaper than in Cebu City at PHP 350 (about U$7) a kilogram. This is a typical market in the Philippines so everything is no-frills. If you want to eat in, the ladies take you to another area where you can buy rice and drinks.

Forget utensils. You hunker down, thank the heavens for the chunks of meat you're about to devour, and dig in with bare hands.

This is one lechon loving experience you want to have.

Cebu is known to have the best lechon in the whole Philippines and that is an absolute fact. For those who don't know, lechon is term for Filipino roast pig. Lechon in Cebu City is quite expensive but if you go to Carcar's Public Market, just walk inside you will find several lechon stalls. All of which sell at the same tariffs/prices so you just have to choose which one stall to buy from.

One thing that is unique about Carcar lechon is that it's really juicy. Once you buy they will give you additional lechon fluids (juice). Beside the lechon stalls are some local eateries, you just choose which one to dine in, buy rice and other main dishes and you can eat with lechon as well.

FYI, lechon in Carcar Public Market is more or less 25%-30% cheaper than lechon in Cebu City.

Tips: When you eat lechon make sure to dip it with soy sauce mixed with vinegar and spices to add a super delicious taste.
