The image of Escarpment group is not exactly about high end, high quality dedicated service, but Darley's is the laudable exception. The long time manager (whom we know from many previous visits) does miracles and must benefit from some leeway by the "investors".
The facility is perfectly appointed and well upkept. There is a more airy seating on the enclosed verandah and a more classical ambience inside. Tables are impeccably dressed and a deep sense of comfort is felt throughout.
We had two perfect dinners with carefully selected,, not cheap, wines. The executive chef is much present and does a fantastic job which would earn him a Michelin star in Europe. He makes efforts to use locally sourced products distinguished by a special label.
In the second evening they even went from very good to outstanding: The bottle of Leeuwin Estate Arts Collection Chardonnay I ordered two days before was out of stock and they managed to find locally an identical bottle of an even better year served at the same price. I wonder how much they actually had to pay for it......
Darley's is the pride of the Blue Mountains and we will return even not staying at Lilianfels anymore until they fixed the attitude / ownership question.
