We were staying at Penha Longa donate one night at Midori. It is a beautiful modern Japanese restaurant influenced by Portuguese cuisine - the chef is very passionate about both Japanese cooking methods, having worked in Japan for several years, and his native Sintra cooking and this is an excellent blend. We had the 7 course Midori tasting menu which I would recommend as it gives a perfect balance of all the dishes. Even the pudding was very good! The service is friendly and knowledgeable especially the US born sommelier who is very clear on her excellent recommendations. We would go again if staying in the resort.
