Disclaimer: I travel to Japan a lot, so that's my reference.
Ishihara in the Nürnberger Altstadt does a pretty good job in making itself as authentically Japanese as possible. The chefs and the dishes are all Japanese, and there are very few compromises. I recommend one of the set menus: it takes your mind off of ordering, and allows you to enjoy the company and the show. This is real Japanese teppanyaki, and not the overly showy performance you may get elsewhere.
Good things: dishes,chefs, seasonings, menu composition, vegetables and mushrooms, Suntory whiskey and Japanese beers available, prices much better than Japan!
Not-so-good things: Sushi could be better (but that's a problem in most of Germany), too much salt, beef is not quite up to Japanese standards, only one basic kind of sake available.
