We live across the street, but that is not why we are customers. We are customers because this charcutier (pork butcher) stocks and serves outstanding products. Meat, patés, sausages and other pork products as well as a wide range of pre-prepared food that is the centuries-old French version of take-out. A small but careful selection of cheeses, wines, oil and preserves is available, as in all charcuteries. Gilles and Catherine are often there, sometimes in New York where Gilles works with Daniel Boulud. Prices are relatively high but not at all shocking and service is outstanding. They have produced a cookbook that puts preparation of some of their key products within reach of someone with moderate experience and determination. I am one of those. Both Gilles and Catherine will answer questions and comment on experience. They also help people plan menus.

It's an Aladdin's cave of beautiful meat products, ranging from the humblest pate to an awesome medal-winning Fromage du Tete (Brawn) along with savoury pastry delights to take home and warm up, or guzzle in the street if they have just come out of the oven. Not cheap, but worth every penny. Service and choice of products are both excellent and one feels treated with a proper old-fashioned courtesy.
Although the address is Rue Notre Dame des Champs, visually it is on the Rue de Rennes and this is how we first saw it walking down from Montparnasse to the Seine. We have been at least three times and having a slice of the Fromage du Tete is one of the highlights of our many and varied culinary treats when in Paris. Be aware it is closed on Sunday and Monday so plan ahead!
