We love this place, little small shop but wonderful flavoured gelato ice cream. Hail rain, snow or sun, the weather is always perfect for a trip to Fabio's! For something a bit different I tried a mozzarella and Parma ham toastie and it was delicious. If you are in Sligo you have to pay a visit to this place. Great coffee too but beware of the impromptu singing from behind the counter!

The migration of Italian families at different times during the last century so enriched my own city of Belfast.

The fish and chips may have been hit and miss, but it was the wonderful ice cream (which they called 'milk ice') that so enraptured generations of locals. We would of course have our favourites and every district would stake its claim to having the best. Desano's, Victor's, Marcello's, Rossi's and Jacavelli's were among the very best. Variations were around the degree of carmalisation, sweetness and 'creaminess' of each offering, but each had a lightness that was achieved, through using relatively low fat ingredients and a two stage process of cooking and freezing. These were a world apart from modern batch frozen ice cream.

Fabio's is a decent, clean and modern ice cream and while I realise it is the more efficient product, it bears little relationship to the beautiful Italian ice cream/ milk ice that I treasure.

Fabio's is always a must go. Fabulous ice cream flavours, great quality and loads of choice, even if your on a diet there is almost always a fat free option. Salted Caramel is divine! Well worth a stop, and if you don't feel like eating just then he has some fantastic carryout boxes that keep your ice cream just fine till you can get it back to your freezer. :)

I have a confession.

Being so very particular about my ice cream and after being spoilt over the last 20 years going to Italy to sample on a daily basis their utterly divine gelato, I refused to believe that gelato of Italian standard was available in Ireland, even though I've passed Fabios, dozens of times over the last few years.

Its embarrassing to be this wrong, BUT Fabios ice cream is truly the equal of anything I've eaten in Italy (perhaps not quite Le Bonta, Lucca standard, see another review) but its very, very good.

The female Italian server takes great pride in her job, she handled the ice cream when serving as only a professional could and should.

Roll up, roll up, get your daily dose of Italy, only at Fabios!!!!!!!!

PS A few more flavours would be even more divine!

Gorgeous traditional Italian gelato and Fabio is a really genial owner, and a proper Italian to boot. Try Fabio's Biccies when it's on the menu, super yum
