If you are starting from Sydney the caves are more than a day trip.

Even if staying in the Blue Mountains or Oberon where a day trip is possible give yourselves a treat and stay at the caves house.

All of the public caves are easy walking, well lit and with guided access.

It's a 3 hour drive from Sydney to the caves and last bit of road is narrow and windy. Really not sure you would do this for one day with young children (and it will be cold).

Things like this are easier

Both Wombeyn Caves and Jenolan Caves have tours suitable for the toddler. Jenolan has a lot more guided tour options than Wombeyn, but Wombeyn has the advantage of a self-guided tour without having to buy a guided tour, and cabins on-site for overnight stays, at cheaper rates than having to stay at Caves House at Jenolan. You will definitely need the backpack for the baby whichever caves you decide to go to.

Both cave areas are a full day trip from Sydney. Wombeyn is south and Jenolan is west. The road to the latter is in better condition than the former. There is also a nice lakeside circuit walk at Jenolan.
