Museums and historic sites might hold interest for the 8yo. The toddler won't get it.

It's a day trip. The kids will probably enjoy Sedona much more. What time of year are you visiting?

I think the 8 yr old would definitely appreciate the Gold King Mine (old cars, relocated historic buildings, burros to feed). The Gold King is about a mile past the main part of Jerome. What is nice about the main district in Jerome is there is a nice small park right there with swings, shade, grass, benches and a slide, if someone needs to keep the kids occupied for a bit as a break.

The 6-12 year old set that visit us all seem to love the two rock shops and would save their money so they could "shop" for rocks.
