If you’re changing that amount I would definitely ask for their “best rate”. There’s no harm in asking for a better rate than the one they show on their boards in-store.

The charge to change £'s to dirham at the airport is 10 dirham and in a mall in the town it is 2 dirham

There's no way I would travel with that amount of cash though - take a debit card and use an ATM to withdraw it. Not because Dubai is unsafe but carelessness or loss in UK airport.

If you lost that £3,000 you won't get it back as it will be over the cash limit of most travel insurance policies.
