It's winter, the weather will be coldish and unpredictable, but the real problem is the lack of visibility for views.
I'd go north to either San Pedro de Atacama or Lauca, although you may still get snow at high altitude. The five hour flight to Easter Island from SCL may also be worth considering.

Have a look at Lauca then, near Arica.
Thanks for the suggestions, I had looked at Lauca, but how do you get from San Pedro to there? As to last minute, I'm not really a last-minute person when I'm travelling overseas, but I guess if we were basing ourselves in Santiago for an extra few days in accommodation that can be cancelled without penalty it would be an option. You would need to bus from Calama to Iquique or Arica, or you could fly from Antofagasta.
