As far as I know, there's a possibility to obtain a 144 hour visa-free visit when in China. However, I really got confused about whether I can stay just within this one particular place I am arriving in or I can also move around. Let's say I'd arrive in Beijing and then I'd like to travel to Shanghai (via train) and then fly out from Shanghai to Japan. Is this still possible while being on a 144hr visa-free visit?

No, you need visa for this plan. You can only stay in the area of the city where you arrive, and need to fly out from there. For each city that has the 144hr option, it is clearly stated what that area is.

You also need to depart to a country other than the one you arrived from.

This is for a transit only, not a trip to China.
