If anyone else could provide insight comparing / contrasting the two hotels it would be greatly appreciated as I have read several TA reviews on both properties individually. Thank you.
But quite honestly, what are you expecting anyone to say? You know the locations, you know the prices, you have read some reviews, you have all the information. One is a large hotel, part of a large chain, with all the benefits that go with that, including several restaurants, a good gym and a casino. There are sea views from many, but not all rooms. If you like large hotels you will probably prefer this one. The other is a smaller hotel on the port. If you like smaller hotels you will probably prefer this one. Both have rooftop restaurants.
What, in particular, are you expecting to learn? Datthecoast was prompting you to think about being more specific and your second post hasn't helped either. You haven't even said what time of year you are coming. No one is going to write 2000 words of compare and contrast in the hope they cover that one thing that is stopping you from making a decision, because it could be anything from the pillow menu, to the brand of stepper in the gym, to the speed of room service.

I have spent some time in the Fairmont ,not the other one. Despite its modernity it has a staff that reflect the old type of hotel service tradition handed down through families. Very nice sea views from the lounge.
A place to see bored Monaco trophy wives. The only place I have shared an elevator with a sea lion (there was a circus event at the time). And a very busy man baying into his phone that he had just got off a "hee-lie-copter" and had exactly 15 minutes "to spend in this town". In short ..very Monte Carlo... as the saying goes.

We are currently staying at The Hermitage Hotel and it is amazing.. from the check in to the food to the pool to the breakfast absolutely outstanding
