A few hours in Assisi

We are doing a private 4 hour Umbria tour (winery and olive oil mill) that lasts until 3pm, then we are spending the night in Assisi before we head to Rome the next day. Can anyone give me any ideas of what would be the best way to spend the rest of the afternoon and evening?

I would like to eat at Bibenda that evening.

The obvious: spent ample time in the magnificent Duomo di Orvieto and enjoy phenomenal Luca Signorelli's frescoes in the Cappella di San Brizio (it is inside the Duomo).

Bibenda looks awesome but then I read that Locanda del Podesta' has excellent gnocchi. Can you drive to that restaurant? Is there parking?
