Does it make practical sense to book 1st class train travel from Dover Priory to Gatwick - about 2 and a bit hours with at least one train change in the London area? We will have a travel and a carry bag each.

No,first class is not worth the extra money for this journey.

It might sometimes make sense on a long trip to Scotland but not on short local journeys.

On that route, absolutely not. Complete waste of money for a near identical seat. The only noticeable difference being a headrest cover.
