And the eclectic cool chic of the world’s most famous beach shapes how we do it. Just as the dramatic vertical pale peaks of the Dolomites contrasts with the cosmopolitan marine landscapes of Bondi, our faith in traditional artisanal hand-crafting cooking contrasts with our creativity and innovation to produce delicately balanced healthy dishes. It’s our tradition in evolution, continuing our journey guided by fond memories of my mother’s Italian home cooking. They say there’s two sides to every story - so stay a while and hear ours.
