On a week's trip to Tuscany out of season we stumbled on this restaurant on a day out in the hills. Situated in a historic piazza it does not give anything away from the outside. Went to this trattoria for Sunday lunch. Lots if hustle and bustle so we figured it would be worth it...and it was! In the centre plaza of Stia you can find this small restaurant where you can sit either inside or on a covered terras. I have eaten at Filetto numerous times over the years. I have also eaten at many other restaurants all over Tuscany. Great little eatery on the square, only open from 10 to 4. The food was typical simple Italian food done well. Can find no fault with preparation, flavours, textures or spicing. Portions too large. Pasta with a heavy tomato sauce. The same sauce on the wild boar stew. Creme brûlée was more like bought custard sauce, with a caramel top. Very cramped interior and outside seating that needs an upgrade.

It was my first visit to Stia and saw this place was nearly full with locals, in a great location in the historic centre. I had the parapadelle with cinghiale then panna cotta for dessert and it was delicious. The waitresses were delightful, obviously very proud of their restaurant.
