We walked over to this restaurant from the Hilton. It was quite busy, but the service and the food were good. I had the Chicken Saltimbocca and my spouse had the lamb ... we enjoyed both.

Typical of Santa Fe, Galisteo Bistro is small and intimate. The wait staff is both everywhere and nowhere, in the best possible way. Multiple servers and runners see to your every need, but always unobtrusively. They have a very nice wine list with acceptable bottles in every price range. Upscale. Unlimited wine list. Menu choices are almost unlimited. Plenty of seafood choices. Easy to fell complete just on the appetizers. Service is impeccable.
