Our daughter and son-in-law had heard good things about this place from their friends who had done a cooking class here and were keen to try it when we visited from Perth. And it took just over half an hour to get there from Dickson...in Canberra. The restaurant was busy but we had reservations. Chef Christophe Gregoire was on hand to greet guests along with his wife, Josephine, and very efficient and friendly staff. Chef Christophe is very passionate about his food and it is reflected in what we ate. He changes his menu according to the seasons and the produce. And he has his own truffle farm. We had a choice of the Winter menu or the Truffle Menu, each comprising three courses with choices. And while we perused the menu we were served with a Kir Royale which was very nice. We ordered the duck, chicken and pork rilletes and escargot for starters. For the mains I could not go pass the cassoulet while the others had the beef bourguinon and the venison. I had to try the crepe suzette for dessert while the others had the cafe groumand (coffee with six different macarons), and licorice creme brulee. We had a lovely local pinot noir to go with my cassoulet. We could not fault anything in all the dishes we ordered. The snails were tasty and had a good texture and the generous serve of rillettes were super. I am a big fan of cassoulet and have had it many times at a restaurant, since closed, here in Perth every Bastille Day. I cleaned the dish out. My wife loved the beef and the daughter and son-in-law devoured their venison with relish. I do miss the days when crepe suzette were made at a trolley by the table but its absence did not detract from the taste. My wife especially enjoyed her coffee and macarons and the creme brulee was very good as well. While we were there that was a big family celebration going on as well as a Christmas in July function. But service was friendly and prompt. There is plenty of parking around the restaurant and credit cards are accepted. Le Tre Bon will be on our list whenever we visit.More
