“Look forward, never back” was a philosophy firmly instilled in Silas Masih, Chef & owner of Denmark’s Pepper & Salt Restaurant at Forest Hill Vineyard, by his first adoptive mother. Growing up in the loving & nurturing Indian community of Fiji has given him a sense of family, community, attachment and discipline. Silas credits Fiji with teaching him that food is about communal pleasure and that simple foods enhanced with flavourful spices can create the finest of meals. To Silas food is soulful, intimate, fulfilling and sexy. Silas’ food focus is using locally-sourced produce and simple techniques to give his dishes the texture and subtle spice of his Fijiian-Indian heritage. Two visits to Pepper & Salt in 2024 and both exceeded expectations.
We had heard nothing but great things about the food from many friends - so of course we had to try for ourselves. And we were not disappointed! Firstly, the views and setting of the winery is stunning. Denmark is a beautiful part of the world, and the restaurant uses this to its advantage.
Every part of your dining experience has had detailed thought put into it. The table settings are minimalistic but elegant, the lighting is lovely. Staff are attentive and knowledgeable, with the added benefit of being engaging to speak with. The wine was very much enjoyed, with a few bottles purchased from the Forest Hills cellar door on leaving.
But… the food! I don’t think I can do it justice in a written review. The flavours are exquisite. Every part of the meal compliments the other. The Chef, Silas, will even come out to make sure you are enjoying your meal, and this man is passionate about food, spice and flavour.
I could go on and on, but I would just recommend you do yourself a favour and book a table to experience this for yourself.
No photos sorry, I was too busy enjoying my meal! Also want to add that there is a menu for children and the curry is delicious! (Yes I had to try it, before nothing was left)

Great venue and seriously good food. Service also professional and attentive. The matron laksa was out sanding and the eye fillet just perfectly cooked and presented. Met the Chef, very dedicated and talented guy.
If you can get the right table there are some excellent views when the sun shines.

We visited on a Friday evening for dinner with our daughter and son in law and their baby daughter. The staff were all very friendly and accommodating, making sure we had space for the pram. The restaurant was very warm when we arrived at 6pm but cooled as the sun went down. The location was beautiful and I imagine it would be lovely to have lunch out on the balcony.
The food was all delicious. We had the scallops, crab and goat to start, beef, venison and cod for main and cheese, peaches, affogato and chocolate dessert. Everyone thoroughly enjoyed every part of their meal. We also shared a bottle of Gewürztraminer, which was fabulous and we had port to finish. My husband was disappointed that there was no dessert wine, however that was the only negative we could find. The service was great with water being replenished throughout without us having to ask and the head chef came to check that we’d enjoyed our meal.
All in all I’d highly recommend Pepper and Salt and we’ll definitely return next time we’re in Denmark.

Any chance of enjoying this restaurant was ruined by the excessive noise the day we went. It was busy, and we could literally not hear the server, nor could he hear us. I understand that there were specials, but we were not offered any - it would have been impossible to hear the details. In addition to the noise of a very busy, very loud, dining room, there was music being piped around the estate, including in the restaurant, so there was deep, thumping music adding to the mix. Service was very slow - our glasses of cold wine were lukewarm by the time we received our first courses. The whole experience was so unpleasant that we couldn’t really appreciate the food. Having recently been to some very good restaurants in the region - at Leeuwin and Vasse Felix wineries, and Wildflower in Perth, we were looking forward to our meal, but nothing was up to the standard of those restaurants.

It’s not often I give 5 stars but I honestly could not fault anything on this visit to Pepper and Salt! From the moment we arrived the staff were attentive without being intrusive. Communication was top notch and we felt like we were the only people there on why was a very busy weekend. The staff are not distracted by the amount of people but rather, focused and on point. I have to take a deep breath now as I move onto the food………….. nothing short of exquisite. Even though I am very familiar with Silas’s food and how it’s always being pretty amazing. This was next level just when I thought it couldn’t get any better. Silas has truly come into his own where his flavours and ingredient combinations are involved. I have traveled extensively and eaten in some fabulous Michelin starred restaurants and Pepper and Salt is right up there.

So disappointed, shouted by family we had heard good reviews so looked forward to the best Denmark has to offer. Had hoped to experience top local produce showcased here, especially seafood but alas was not to be.
Marron starter was undercooked and the crumbed pork was overcooked, Korean pickled cabbage was on task.
Prawn main was tasteless Vietnamese translucent fare that seems to be the cheap option everywhere now ….. what ever happened to WA prawns, equal to the best in the world …. the accompanying ’sauce’ tried to compensate for the missing flavour …. unsuccessfully.
Best Chardonnay on offer was their own 2023 which was so underdeveloped it was akin to an overly young Sav Blanc. The Cab & Shiraz were far better but still 2yo at best, I love the regional wines here but where were they ?? . Desert for my partner no better but luckily I had the affogato which can’t go wrong.
Three courses pushed out in 75 minutes didn’t make for a memorable Birthday dinner ….. everything wreaked of being pre made which probably explains why the Chef was in the Restaurant the entire time chatting to patrons 🙄

Such unique flavour combinations never fail to impress! Managed to book a table for dinner during the peak January holidays and we felt throughly spoilt. Seated quickly and offered bottled or tap water then more fun drinks! Lots of local options. Then moved on to our amazing meal. There was a set menu and our table chose a good range of pretty much everything on offer! Nobody could agree which was the best dish - we all loved what was in front of us!! Marron always a highlight but I loved my choice of tender Esperance octopus. The beef main dish was very popular but my barramundi with curry sauce was incredible! A couple of us even treated ourselves to dessert, they were that tempting!
Very special restaurant with a great Denmark setting, unique flavours in every dish and attentive staff. We even got a visit from the chef to make sure everything was perfect. Do yourselves a favour. If you have just one meal out during your time in Denmark, make sure it’s at Pepper + Salt!

It’s a great place to eat, drink and be merry. Silas is very hospitable and a great chef too. The set menu offers a range of exquisite dishes. Service is great, friendly. Wines from the nearby, independent gang at Forest Hill Winery is pricey but excellent and worth it given the level of cuisine. We’ve been dropping in to this restaurant over many years and it has always been a pleasure.

Our title reflects the business card of the restaurant, because for us that was our experience. We have been travelling through WA for 5 1/2 mths, and this has been our best overall dining experience to date.
It was a very busy Sunday afternoon, and we booked a table on the spur of the moment. From the moment we arrived the ambience, the Service, and the food and wine were all first rate, we couldn’t have faulted a thing even if we had wanted to. The wait staff and head chef were ensuring every diner at every table had the same great experience, and you could hear it in happy conversations, laughter and witness the pleasure as plates of mouthwatering meals were brought out.
The fixed menu prices worked well, and we chose marron, lamb, beef and a wonderful desert of raspberry Bavois which was just perfect with other delicate flavour accompaniments.
The wine suggested by our waitress was a perfect pairing to our main and we just had a very happy memorable time. Thank you to all concerned, we wish you well.

Outstanding lunch! All seven of us quite discerning diners had a fantastic experience. I can't recall a better meal anywhere.
I chose a beef fillet main and the chocolate desert from the $75/ Two course menu. Superb presentation and great service.
Not expensive. $100 each including good wines.
No hesitation in recommending.

We booked our table online 3 weeks prior to our lunch date with friends (table of 4), and made sure that we arrived well prior to our allocated time.
On arrival we were shown to a table at the very rear corner, under a plastic over hang with a cool southerly breeze blowing on a 14 degree day.
We were not happy with our seats, the girls were extremely cold with the cold breeze blowing through.
I asked to see the manager to have our seats relocated. When she arrived at our table she immediately stated that most people had booked 2 weeks in advance and there were no other seating options.
I stated to her that we had booked 3 weeks prior and so by her measure we should be getting much better seats than what she was offering.
Fortunately my wife was able to locate a free table further inside the restaurant which as set for 3 people. The manager agreed to make it into a table of four for us.
The meal was of excellent quality but the much less than satisfactory seating blunder put a taint on the afternoon.
Both managers were not attentive or customer focused enough to approach us again during our whole meal even though they knew that our experience was not great.
We noticed that as busy as the restaurant was, and with many others arriving after us, many of whom were obviously walk-ins at the end of the dining period, that the initial table that we were told was our only option was not used again all afternoon!
I personally provided our waitress with a handsome tip for her service to ensure that the collective (ie the managers) did not share in the tip!

Massive disappointment. This has been our special occasion choice every year. We are used to the small portions so when we say tiny we mean tiny this time. Smallest marron we’ve ever seen. Challenge to find any meat. Though sauce exquisite. My main was frankly embarrassing. So small. Meat braised not grilled. And very salty. Asparagus perfect. I did mention the steak because so unlike past experience. Not interested. Nor did we get the promised recipe to go with purchased curry powder though I asked on line again.

A kind of odd dining experience. Feels like this place isn’t really sure what’s it trying to be. Fine dining vibe in a beautiful setting, with plastic chairs.
The whole spice focus doesn’t really work, it’s not clever thoughtful use of spices, more standard curry flavours in, for example, pasta.
The fish and steak mains were cooked really well, but both came with bland steamed veg.
Some of the flavours just don’t really work.
There’s not a lot of options in Denmark and this place isn’t stupidly priced, it’s just not that great.
I wouldn’t bother going back, could be so much better.

Every dish they serve is incredible and will stay in your memory forever.
It was a spectacular expression of flavour, not ostentatious, but perfectly balanced and inspiring.
The experience was inspiring also, as the manager and head chef Silas, wanders the restaurant floor greeting guests, checking in and helping out (first time ive seen a head chef clear a table). Incredibly humble and friendly.

After travelling around in a camper van for a week and being foodies we were really after a luxe meal and were recommended this place by a few people who had also been in the Denmark area. Highly recommend. The chef interacts with the diners and took genuine concern in my husbands tomato allergy and modified his meal to suit. Meals were a great portion and the set price for either two course or three course was reasonable. We had a bottle of rosé from the winery itself which was also tasty and not too sweet. If we are back in the area we will return for sure.
