Yesterday we spent the late afternoon shopping and dining in Manitou Springs. We selected our restaurant (PJ's Bistro) and were blown away never expecting to spend two savory hours sampling small plates of homemade in-house Polish/Hungarian food. It.was.amazing.and.something.I.will.remember.forever.

They offer 3 different pierogis: meat, vegetarian, and Russian. All were delicious and the staff was very friendly and helpful. I can't wait to come back to try the potato pancakes!
