Delicious, but you are insane to wait as long as they do. I only tried it because because it was a catered affair (no waiting). I even hesitated to give it a lower rating because of the wait times. You can drive to Taylor, Tx (the birthplace of this chef's recipe) eat, and be back in Austin before you would... More

First stop after arriving in Austin. Got in line early afternoon around 2:15 and waited in line less than hour. Staff was very friendly informing us of the wait time status. Yes, the queue was long but the brisket, is absolutely divine. Juicy tender smoky crispy and soft at the same time and simply worth every second waiting in line. Stop winning about the long wait, and use the time to meet people from all around the globe as you wait over a common passion/interest; food.

Yes, you will end up waiting 3-4 hours, but it is definitely worth it. The local tip is that the wait is part of the experience. It is more like tailgating and less like a wait for a restaurant. Wait is long, but worth it. The staff keeps you updated on waiting time and availability of food, which helps manage expectations. Also, you can already have drinks in the queue and use the restroom. Food was really delicious. However, they could slightly improve on cleanliness (especially of the restrooms).
