We were in Launceston for five days over the Christmas period and had already enjoyed good meals at Mudbar, Grain of the Silos and Rupert & Hound. On a Friday at 6.30pm, Stillwater was very busy but the staff were handling it with cool efficiency and good humour. We started with our usual margarita and martini (both excellent) and took a while to negotiate over what we were going to share from the menu. Lots of options but we reached consensus eventually - smoked eel croquettes, salmon caviar, prawn potstickers, kingfish tartare and whole quail - all wonderful and accompanied by chardonnay and pinot noir. No dessert but espresso martinis ended another great meal. The walk back along the river to Peppers Seaport Hotel followed by a bottle of red on our balcony overlooking the lit-up footbridge finished the evening perfectly.

A first class experience from beginning to end. As visitors from Melbourne we wanted to have some great Tasmanian produce cooked well and wow did we get it at Stillwater! . The staff were so professional and the concept of the set price al a carte menu is great. 2 courses $80, 3 courses $90. A great wine list too. The cape grim steak was possibly the best steak I’ve ever eaten. The hassle back potatoes are a must. The squid entree moved, literally, I’ve never seen anything like it.....and the passionfruit parfait ! The food was off the charts ... do yourself a favour....

Had breakfast, sat with our dog out the front and they were super lovely, asked breed / name, prompt service. Food and coffee were both amazing. Genuinely floored by the quality of ingredients, promptly served full hot breakfast that tasted excellent. Nice view from outside but I suspect inside would be nicer. We had no trouble grabbing a table at circa 9.30am on a Sunday but rush started at about 10-10.15, so heed other warnings about booking ahead to be safe.

We had a very enjoyable dinner at Stillwater. If you are a couple be sure to ask for a window table when booking, so that you can enjoy the view as well. The staff were helpful in discussing the menu and drinks options but perhaps not so interested if there was some criticism. The scallops were delicious but very small and the potsticker prawns were very spicy which might not suit all tastes so be aware! All the fish was beautifully prepared and served and as a first timer with wallaby, I enjoyed it. The potato and broccoli sides were more than enough to share but we felt that they and the mains had waited on service from the kitchen just a bit longer than they should and when they arrived at the table, they could have been warmer. We were asked if we had enjoyed our mains and we said that we thought they could have been warmer but the waiter simply wasn’t interested. We still enjoyed the food but for a restaurant striving to develop a reputation, it went against the chatty exchanges we had had earlier with a manager. This aside it was a good dinner and we enjoyed the Stillwater experience. One other comment, we logged into the house wifi and used it to discuss plans for the following day but were very quickly logged out as we had used our allocation of downloads. Most unusual for any restaurant to limit use, especially one trying to make it’s way. The staff then logged us into the hotel guest wifi which seemed to work OK.

Stillwater is generally reckoned to be the best restaurant in northern Tasmania and is worth visiting on any trip to Launceston. The menu is set out as snacks, entrees, mains and dessert, and the 3 courses for $90 is good value, considering the quality of the food. Scallops were a great “snack” and the tiger prawn dumplings surprised with the presentation and had a nice bite to them. Mains were perhaps the least impressive of the dishes but were still enjoyable. Beware if you order the potatoes as a side, as they are almost a main in their own right. In January the place was packed, and staff did a good job changing tables, taking orders and delivering meals. The venue is superb – a historic building on the waterfront, and within walking distance of most parts of the city, and there’s plenty of parking right outside or on the street, if you’re here for dinner.

We called in for lunch and were delighted to get a table with no booking. Chose fish and chips. The fish was battered flake which, whilst our favourite, is just gummy shark and also very cheap. Serve was small with a few chips and supermarket greens on the side. It was nothing more special than a standard pub meal and cost $35 pp. Total rip-off. Very disappointed and will not return.

On arrival we were greeted by a very stern yet highly efficient waitress. She directed us to a table with a view of a wooden wall. Stillwater is famous for its location so we were quite surprised. "The tables with a view are reserved for those that book early" she explained rather disapprovingly (we had only recently booked the table). Again this was a surprise as on the website this booking date prejudice isn't clearly explained. It seems only early bookers deserve a nice view. On the plus side the food was lovely. There was a young trainer waiter he was charming with a bright sunny disposition. My hope is that with this new generation the culture of making late bookers suffer with no views will be changed. A promised land I alas will never see. Like Stillwater many places in Tassie have wonderful food, few have good views. If you want a view please book in early, if not suffer the woes of no view rightly imposed on the impertinent people who have the gall to book in at the last minute.

Hello, thank you for your review, delighted to hear you enjoyed the food. To address your disappointment with the table, may I begin with I don't think there would be a restaurant in the world which takes bookings (as opposed to a no booking/walk-in only restaurant) which would not have a policy of first in/best seat in the house concept. It applies with many things in the world - for example I went to book theatre tickets myself the other day for a show within a few days, were the seats I wanted available? Of course not, if I wanted them, do I get them? Of course not, the people who booked before me will get the best seats in the house. Appointment times - just because you want it, doesn't mean you get it if someone got in before you to book your preferred time. Sorry if it has seemed as a 'disapproving' response, we're just stating facts and I don't think any sunny disposition would have made any difference because I couldn't give you what you wanted. I'd also like to suggest putting the shoe on the other foot - had you booked 1 or 2 months in advance and I gave that table to another guest who only booked a day or two in advance, simply because they wanted the table, I don't think you would be too impressed. Our young trainee waiter and any generation of waiter will learn that this is the case, it is not to punish nor make any one feel bad, but it is simply a fact of life and culture. This restaurant is 21 years old, this policy has been in place well before this restaurant in places across the world, most likely since the inception of restaurants back in France, dating back to 1765. For anyone reading this review, it should be noted you at least had half a window to look out and were still seated on the preferred side of the room. It's an 1830's heritage listed building - we don't have the luxury of knocking out old walls to create a window view for every single person. We won't be explaining this on the website as there may be pure pot luck in that for some reason hardly anyone booked in advance and a day or two out may in fact warrant you the best seat in the house, who knows!

This is definitely a high end restaurant and is in a beautifully renovated heritage building close to the river in Launceston. We went for our wedding anniversary and booked online for an early sitting. Even though we were the first people to arrive, we were seated in a very out of the way part of the restaurant, by the toilet and fire escape, which didn’t set a great first impression. The window was open, blowing quite a stiff breeze directly onto us. In fact, it blew the menu right off the table! We asked for it to be closed, however our waitperson said they had to keep it open for ventilation, but did partly close it ( would have been nice if we had been offered a different location but oh well) Any way, on to the food, which didn’t disappoint. You can order entree/main, main/dessert, or 3 courses for set prices. My entree of heirloom beetroot and goat cheese was delicious and very well presented. Main of lamb was succulent but as often the case with lamb, a little fatty. Shared a half bottle of Tasmanian Pinot from the extensive wine list. My husband also enjoyed his sashimi kingfish followed by steak. I think if you are seated at one of the tables in the main section of the restaurant you would have a much better experience. My recommendation would be to request that if you are thinking of eating here,especially as it is an expensive place to visit.

This is my son’s favourite so we went here for lunch. Everything was good, food, service and wine list. The menu although not extensive was varied and offered a reasonable selection. I must say I’m glad my son was paying because it’s very overpriced for the average punter. Cheapest wine by the glass is $15 and the food serves were very small with a big price tag. Overall I enjoyed it but I couldn’t recommend it for value for money

The service and food was fantastic. We went out for dinner with our 9 year old and 3 year old boys which is always “busy”! The waitresses couldn’t do enough to help us (changing the menu a bit to accommodate us with gluten free options etc). Great food, wine and service. What more could you ask for? Great night had by all.

I choose to eat at Stillwater fairly often and always enjoy the creativity of the menu, as well as the welcoming, warm atmosphere. The setting is so very Tasmanian too, so it's a great place to take visiting friends. What gets a gold star from me is their instant response, care and recovery. I can't speak too highly about the concern they exhibit for people who, like me, suffer from dietary problems. Textbook perfection!

Our daughter and S-I-L booked a lunch to help us celebrate 50 wonderful years of married life, and boy, what a celebration it was. From the moment of our welcome until we left it was a most wonderful experience. The warm olives delectable, the house bread scrumptious and our steaks melted on our forks. Our desserts were served with a chocolate disc on which was written "Happy Anniversary" A small touch that meant so much. The service was exceptional as was the wine list. Thank you for a truly memorable meal.

We came to Stillwater with great anticipation and high hopes (we had been a few times, always amazing, the last time 3 years ago now). We were five minutes late for our booking and were hunted to our table, but then ignored a while, then profusely apologised to, then ignored again. I like and appreciate a limited menu, but this time the menu (food and wine by the glass) was so limited, that rather than picking something truly appealing, we had to settle for the “least worst” option, which is not really what you come to Stillwater for. If you are only going to offer three reds by the glass, then at least offer three wine styles not 2 Pinots and one other option. For mains three of the five choices were hunks of red meat, and if that is not your go, then pickings were slim. I settled for the gnocchi even though gnocchi always seems to be a gloopy little glob (and it was, though the sauce and mushrooms were very tasty). The best dish was the squid and noodles entree (though it seemed out of place with the rest of the menu). Dessert was pretty, but predominantly a blob of cream. The meal was not a disaster, but disappointing and far from the exquisite experience that we had expected Stillwater to offer.

I was lucky to score a table for 1 at the unfashionable time of 6pm....table was ready for me with three magazines to read which was a nice touch. Service was wonderful - really lovely social staff indeed. I ate an entire jar of chicken liver parfait with a Madeira gel on top and it was magnificent. For main I had the roasted wallaby on macadamia and green wheat and it too was wonderful. I had a side of roasted pumpkin with Smokey yoghurt and seeds which was great but too large for one. That would be my only Criticism - at $11 they are big sides for one person! Get a table if you and enjoy a clever menu with great food.
