We had a celebratory dinner here, the food was amazing and the staff fantastic. Every dish was explained to us in detailed. The price for the degustation was very reasonable and a few extra dishes put as extrasin as we were a large group. The wine list was also very well priced. I would recommend to definitely come and try this exceptional Peruvian food. Well done to all.

We came here as we were staying at the hotel, for the advertised Australia Day 5 course menu.
My husband has travelled to Peru with work a bit, and loves the food.
The restaurant is beautifully designed and just lovely. The waiting staff were so friendly and professional, it was an extremely busy event but the atmosphere was lovely, especially as we went to the 9th floor before the main course and watched the fireworks from what must be the best vantage point in Perth.
The food was amazing. We had a fabulous evening.
If I did have to criticise anything we were a party of 5 and we got exactly the same servings as a party of 4, we also watched a table of obviously 6 VIP’s, get served a lot more food not just serving size but variety and wine. The chef came out to them a few times, maybe they should have been in a seperate part of the restaurant.
Overall can’t rate this restaurant more highly, next time we are in Perth we will definitely be coming back and recommend it highly.

During my check-in at the PanPacific hotel, the receptionist made me aware of this restaurant in the hotel. I made a fast reservation with the concierge and a table was booked. This restaurant serves the Peruvian Cuisine. I had a very nice Ceviche (raw fish) as appetizer. For the main dish I had chosen for the Beef. (Lomo). As I was not asked how I would like to have my beef cooked, normally medium (or in some countries medium well), when I received my dish, I thought that it might be a bit too medium for my taste. However, as the quality of the beef was so good, I was glad that I let it to the chef, how to cook. as it tasted very good.

As we are not familiar with the style of food we decided to opt for the "feed me" menu. This gave a good taste of the cuisine. However, probably our own fault, but the food came out too quickly. As soon as the plates were cleared the next course came and our anniversary dinner took just under 30 minutes. It would have been much nicer to have it spaced out as we would have appreciated it much more. We drive from the northern suburbs for our booking at 7.30 and were back indoors at 8.50 !!!
The staff were most pleasant but as we were under their guidance, to ask if we wanted it spaced out a bit would have been nice.

Time between starters and mains were long, the waiter then brought out a dish we did not order and when told, he looked very confused as if to say he hadn’t accidentally picked up the wrong plate, as there were no extra dishes to pick. We then had to wait an extra 10/15 minutes for our previously ordered chicken to come out (still at this time the waitress who too the order did not accept fault to putting in the wrong order). We then found the chicken to be undercooked but were told by the waitress ‘definitely not, as we cook it twice’. It was clear that they had incorrectly placed our order and had to rush cook the chicken. The chefs also sent out a plate of skewers and told it was a ‘if we didn’t like the chicken’ plate, although me and my partner both knew the chefs were trying to do right and started cooking the skewers at the same time when realising our chicken order hadn’t been placed and would be late.
At this point still not accepting any responsibility and made us to feel like we were being fussy/incompetent at telling if chicken was cooked or not (took photos for reference). We did not stay for long after mains were finally served, chicken was not edible in places and we didn’t appreciate being made to feel like we were unwelcome. When paying the bill we got the chicken taken off as a ‘you didn’t like the taste’, not a ‘we messed up’. The bill was still a relatively high price and considering the experience really made our celebration night a bit sour, the place still were quite profitable from us.
All in all, if blame was just accepted right from the start, and we had to deal with a little longer wait time but served with an apology, there wouldn’t be any complaints. I’m not one to normally leave reviews especially not bad ones, but UMA did not do right by us and it really did but a downer to our good day.
(Scallops as a starter were very nice). But will not go back nor recommend.

Tonight's dinner at Uma was simply one of the best restaurant meals I've ever had and was matched by genuinely friendly, informative and professional service. We really appreciated the through explanation by the head waitress of the menu and the five of us followed her advice - share two dishes from every course except for sweets where we had three. Every dish was beautifully presented and had such distinct, exquisite flavours from the ceviche and brioche through the pork belly and Rankin cod to the sweets. It was almost impossible to choose a favourite because they were all so good.
Just one comment about the service - too often, even in "fine dining" restaurants, we have experienced the service deteriorate as the night progresses and the restaurant fills up. Uma by comparison did not miss a beat as it reached probably two thirds capacity, not least because it was evident that extra waiting staff had been rostered to start at the busy time.
Uma sets a very, very high standard but it does so without any pretence or excessive pricing, it is simply.....superb.

We had never eaten Peruvian food before so we're not sure what to expect or order but the staff talked you through the menu.The dishes are meant for sharing so you can try a few different ones. Everything was well cooked and really tasty.We went back a few nights later to try different things we enjoyed it so much. It was very busy but you got plenty of attention when needed. It was quite noisy as it was full but not unpleasant. The alpaca dumplings are great.

Journey through Peru via food. The food, whilst on the pricey side was nice and a lovely experience except for the “Enchupetado” creamy seafood rice dish which was very over salted. The “Pescado” barramundi steak was beautifully cooked and served with a lovely picante sauce. The “Legumbres” bean salad was delicious and not over the top spicey. I note that there is a bit of a push for the set menu, instead of the ala-carte, but there is a nice range of ala-carte options to choose from including Alpaca.
The dessert selection was small, however delightful. The “Pionono” was a very happy dessert with lots of flavours and textures and a delight to eat. As for cocktails I can recommend that you try the Pisco Sour Cocktail.
For a five-star restaurant I would have expected table cloths and perhaps an ornament/lamp/candle/flower/anything on the table, it just looked so bare with only the cutlery, glass and plate. The tables, the way they were presented reminded me of a cafeteria, more than a high end restaurant.
What spoilt the night for us was the extremely pushy and annoying service of our server. You did not have time to absorb your surroundings or even the chance to properly peruse the menu before you were asked three times for your order. When asked for a little bit more time to decide, the server was back within 30 seconds????? I did not recall her smiling at all the whole night, the service bordered on pushy and mechanically that at one stage we were going to leave, but decided to stay as I wanted to sample the Peruvian cuisine.
I also was not impressed that we had ordered sparkling water and when the second bottle of water arrived on our table, it was still water (which is fine) however our server proceeded to top our glasses of sparking water with the still water?????, we did not bother saying anything at this stage as we had, had enough of the weird service.
So the food was good, enjoyed the food journey through Peru, the service not so good.

I can't believe that we have never tried Uma before now. Located on the ground floor of the Pan Pacific Hotel. Don't be put off by the fact it is currently a quarantine hotel - those guests are adequately separated and the hotel has strict quarantine provisions (including an automatic temperature check at the font door).
We booked in advance for a Saturday night dinner and glad that we did as it appeared to be full. At first the service seemed a bit chaotic with staff running around everywhere. Based on the reviews we both ordered cocktails - Pisco sour and Chilcano de Pisco, which seemed to take forever to arrive, only to find out that they had been delivered to another table (not ours). The cocktails were refreshing and the perfect start to the evening.
Whilst there were a number of delicious sounding items on the menu we eventually went with the $75/head progressive menu (Taste of Peru), as we thought that way we would taste a bit of everything and some dishes that we probably wouldn't have ordered normally. The first dishes, Tiradito de Trucha (cured trout with passion fruit ‘tiger’s milk’) and Ceviche de Camarones (Abrolhos Island prawns ceviche), also made their way to another table to start with - not certain what had happened to the ordering system back of house. I can not stop raving about the prawn ceviche they were so delicate and the desert limes/coriander oil set them off perfectly. The other dishes included the Pan de Yema (egg white bread rolls); Yucas (twice cooked Cassava cubes with rocoto mayonnaise); Chaufa de Mariscos (medley of rice, vegetables and seafood); and Pulpo a la Piedra (grilled Fremantle octopus). I'm not a big fan of cassavas as I find them very starchy and could hardly find much seafood in the Mariscos. The octopus was scrumptious and I was left wanting more.
We were suitably surprised when they brought out a dish with Alfajor Peruano (a shortbread biscuit with caramel), decorated with Happy Anniversary (I must have mentioned it on our booking but had completely forgotten). Then we received our 'real' desert, Tres Leches (milk soaked sponge cake with raspberry sauce/sorbet). I found the cake very dense and wished that there had been more sauce/sorbet to cut through the cake.
I think that next time we visit (and there will be a next time) we would definitely select a mains from the menu rather than a series of tasting plates. They probably could do something about the acoustics in the restaurant, with the music and the other guests conversations echoing around it was hard to hold a conversation. In summary however we had a really nice night out and would recommend you try Uma and its Peruvian delights.

Totally new to Peruvian cuisine but was pleasantly persuaded by five courses of complex tasting cuisine which were presented in sharing arrangement suited our wedding anniversary celebration nicely. Staff were very attentive without being intrusive. As we travelled from Denmark (WA) to Uma especially to mark a special occasion, we were pleased with Uma staff pitching in with special celebratory biscuits for us. We will return to Uma sooner we think.

As soon as we entered the Pan Pacific hotel a concierge greeted us , asked where we were going and escorted us to the restaurant entrance, been made to feel very welcome before you’ve even sat down is always a huge plus.
We chose the “Journey through Peru” menu with matching wines.
The three plates of shared entrees arrived in a timely fashion and the waitperson did a good job of explaining the contents of each. The Ceviche of snapper was fresh, not overly chilled so the flavours could stand out and a delicious dish. Next up was another style of Ceviche with trout been the highlighted protein, a full on flavourful dish that kept giving as different layers of flavour shone through.
The whipped feta and bread was also a well presented dish.
Next up was Llama and Wagu beef skewers, the Llama was a soft textured meat with a delicate flavour. Followed by a perfectly charred piece of Fremantle octopus that was tender and topped with salsa and olive oil mayo.
A very enjoyable experience, great food, a good ambience and pleasant experienced waitstaff made this a good night out, and exceptionally well priced.

Went on New Year's Eve for the 5 courses with matched wines. From start to finish it was a wonderful culinary experience. The food was excellent and very interesting and the waitresses very knowledgeable about the wines. Would definitely recommend Uma.

Service, food, experience - we had a perfect night at Uma!
The food was amazing, I'd be willing to say it may even top melbournes pastuso!
The ceviche in "tigers milk" was a highlight, some of the freshest fish I've had on the shore. And the wines were paired perfectly(reccomendations of the staff.
The waiters we're friendly and attentive without going overboard - the manager even stopped by for a chat!
Despite being fine dining, you certainly get what you pay for - Im already planning another visit.

We had never tried Peruvian cuisine before and were impressed from the first mouthful. The food was fantastic, although the steak was not quite the way my husband enjoys his. The staff were very attentive and explained each dish and answered all of our questions. We could not fault any aspect of the experience.

Table of 4 set menu with wine pairings. $105 per person. First course ceviche was nice, I liked it. A bit of spice followed through with the fresh ocean flavors. Crumbed fried chicken was OK, but its fried chicken. Apparently the bread was nice but personally I didn't have any. Wait time to entrée was way way too long. We waited 25 minutes and didn't receive our second of three wine until I asked the waitress.
Having to buy drinks between courses when you have paid for the wine pairing is not OK.
We also had to ask for our 3rd wine (dessert) as they failed to serve it. Mains were plentiful but nothing to write home about. Dessert may have got them across the line, but only just. A very nice Pisco Sour gets them a bonus .5 points
