Not only a classy bar but a decadent display of spirits and the most astonishing collection of fossils throughout the bar set in cabinets, from the private collection of the owner apparently. We all had such a lovely night sipping cocktails here. Our server, as were all the staff, were very knowledgeable and enjoyed creating items off menu as well. Beautiful venue however you are paying $25 for a standard cocktail. Very overprice. Definite visit just to look around

What an amazing bar, great drinks, great food and staff were amazing. Nice and relaxed atmosphere we only had Gin drinks they were a very nice mix

We ate here a couple of nights. No booking needed, but be early as it could get quite busy. Overall dishes were quite good. The burger on the first night was a bit dry, but second time was nice and juicy.

Great spot to drop in for a drink, pre or post dinner. Good selection of scotch and other spirits, with helpful service staff

We dropped in for a couple of dry martini’s here the other night in Hobart. The decor is stylish, loved the bear skeleton, kind of mesmerising. The Martini’s were good, but not as good as those from Musque in The Barossa we had a few...months back. At just under $60 for 2 Martini’s, it’s certainly not cheap either. It’s well located, with a nice upmarket vibe though and worth a visit 🍸🍸More

Stopped in for a drink before the Sydney to Hobart yachts arrived. The day was cold outside and the bar quiet (public holiday) but the staff were extremely welcoming, Drinks were made quickly and tasty food followed. The ambience is great - lots of sleek...wood and interesting fossils on display.More

From the moment we entered staff were hostile towards us. The place was full of tables with no drinks, all we’re waiting for the single bar tender to tend to all their orders while the remainder of floor staff stood watching. The table water was...tainted and off putting. I wouldn’t be going back.More

A great range of brilliantly executed and imaginative cocktails in an atmospheric setting in keeping with the evolution theme. Friendly, knowledgeable staff and a great wine list. Definitely worth a visit, even if you aren’t staying in the hotel.More
