Humans have long tried to understand our world, explaining its complexities through theories of spirituality, biology, geography and astronomy. This insatiable thirst for understanding fuelled a period of unprecedented discovery during the 1800s with the mapping of our globe, the industrial revolution and the collection of countless botanical, zoological and geological artefacts. Our minds expanded with curiosity as mysterious fossils were uncovered; answering some questions, but presenting thousands more. And just as palaeontologists have captured our imagination with incredible beasts from centuries past, so too have the world’s master distillers by hand-crafting the finest spirits through alchemy of earth’s elements. These spirits endeavour to explain the complexities of our world and are celebrated, wholeheartedly, at Evolve Spirits Bar.

Stopped in for a drink before the Sydney to Hobart yachts arrived. The day was cold outside and the bar quiet (public holiday) but the staff were extremely welcoming, Drinks were made quickly and tasty food followed. The ambience is great - lots of sleek wood and interesting fossils on display.

This bar is attached to the MACq01 hotel. It has an awesome range of spirits and wines and the staff are very good at explaining the menu and giving recommendations/making cocktails to suit your tastes. The bar is a very nice evening setting in its own right, located by the water in a low lit room, but the addition of fossils, complete with a book to explain the different things you can see, is a unique and interesting touch.

We all had such a lovely night sipping cocktails here. Our server, as were all the staff, were very knowledgeable and enjoyed creating items off menu as well. The food options are small, but enough to compliment a drink, or two. The vibe of the bar is pretty amazing too, surrounding yourself with fossils, cosy seating areas and a darker ambiance.

From the moment we entered staff were hostile towards us. The place was full of tables with no drinks, all we’re waiting for the single bar tender to tend to all their orders while the remainder of floor staff stood watching. The table water was tainted and off putting. I wouldn’t be going back.

A great place to sit and watch over the water with cocktail in hand.
We enjoyed the drinks and the food was also fantastic- especially the duck croquettes.
It’s not really fitted out like a restaurant (more like a bar as the name suggests) so it wasn’t super easy to eat our meals on low tables and couches but other than that we loved it.

We ate here a couple of nights. No booking needed, but be early as it could get quite busy.
Overall dishes were quite good. The burger on the first night was a bit dry, but second time was nice and juicy.

We dropped in for a couple of dry martini’s here the other night in Hobart. The decor is stylish, loved the bear skeleton, kind of mesmerising. The Martini’s were good, but not as good as those from Musque in The Barossa we had a few months back. At just under $60 for 2 Martini’s, it’s certainly not cheap either. It’s well located, with a nice upmarket vibe though and worth a visit 🍸🍸

Staff were friendly and attentive. The cocktails we had were delicious. There is a significant list to choose from as well as every spirit you could dream of. The atmosphere was relaxing and great for a couple to enjoy a quiet drink

We visited this bar a couple of times as so comfortable, relaxed and extensive drinks list. The cocktail waiter/s were kept very busy but all very good. Meals available but we simply enjoyed the drinks and location

One of the most interesting bars I’ve ever been!! Not only a classy bar but a decadent display of spirits and the most astonishing collection of fossils throughout the bar set in cabinets, from the private collection of the owner apparently. I’m in awe. You must visit for a drink! Forget about the drink price, I’d pay a fee to just visit this place!

This is a classy establishment with an excellent drinks list, including some inventive delicious cocktails. We were very well looked after and the cheese board hit the spot. The bar itself is chic but cozy - beautifully presented.

A great range of brilliantly executed and imaginative cocktails in an atmospheric setting in keeping with the evolution theme. Friendly, knowledgeable staff and a great wine list. Definitely worth a visit, even if you aren’t staying in the hotel.
