The food is up there, with a wide variety of choices. Food is not a problem at all.
What is different is how this place is operated. This restaurant does not feel like a Marriott hotel, it is more like a restaurant. Service is formal, but atmosphere is casual. A lot of the wait staffs are clearly new to the industry (young graduates), but they do try their best, and generally service is good and don't really make mistakes.
As the restaurant is in the middle of the hotel building, there is no ceiling as such (except the actual roof of the building), sound is not being bounced back from walls and ceiling, this is a perfect place for conversations.

I’ve eaten here a few times with different menus. Initially the open area off the lobby was uninspiring but the food and service won me over. I dislike the usual ho hum hotel menus that you can recite before arriving. Silvesters should be regarded as a serious stand alone fine diner worthy of a spot in Sydney’s better establishments

Beautiful dinner during the week at Silvester’s.
Excellent service in an elegant space. The new menu is my favourite so far, we tried several dishes and all were amazing, quality produce and beautifully presented.

It was not busy when we ate here. #80445 Jen took our order of King Prawns and Spatcock, and other stuff. Drinks and food came fast with a few people making sure that we had everything. Food tasted good. Then when it came time for dessert, nobody came to our table. It seemed like they vanished. Finally got some Awesome Smoked Ice Cream. But, then came time for the bill. We asked a few people and they said they would have her bring it to us. We waited for over 20 min for just the bill. It was like they did not want us to leave, so that it would look like the place was busy. We saw other people waiting also. A horrible way to be treated when you spend $151.00 for 2 people.

Located at the Marriott Hotel, we chose this restaurant with family staying from the United States. We asked for explanations of the menu options however none of us could understand the Spanish waitress, so were none the wiser. The Farm Beets with unusual flavours and a spoonful of sorbet, and the large serving of Potato Gnocchi were our favourites. Two of our party ordered the Tasmanian Trout, but were not happy with the texture of the trout. All six at our table voted the plate of fries top class.
Restaurant is classy and comfortable, and ideally located in the foyer of the Marriott.

Worst Xmas dinner ever!
With not having a lot of places open for xmas, we decided to dine here as it was convenient as we were staying in the hotel and the reviews were good! The host was friendly but it took over half an hour for someone to take our food order and a long time for our drinks to come. When we had eaten our starters they forgot to tell the kicthen we’d had them and had to double check with us that we’d actually had them! They gave us a round of free drinks for the inconvenience. Then the xmas dinner came, two of us had chicken which was just chicken and parsnips and a singular carrot, the chicken was the driest chicken i’ve ever had, not even edible, when we told the manager she said she was sorry to hear that! We waited an even bigger amount of time for the dessert to come (xmas pud) which was ok but nothing special. We ended up having one of our meals free, but if you’re looking for a place with a nice meal it’s not this; i’m writing this review so that others don’t make the same mistake. The one star is for one of the servers who went above and beyond to apologise when it wasn’t his fault the chefs can’t cook chicken or cope with the capacity for a xmas dinner that they would’ve been aware of!

Had Xmas lunch at Silvesters. Pricing was reasonable for Xmas day, would have preferred it to include more champagne but we got one glass on arrival. The venue was beautifully decorated in xmas theme. Food was amazing and included a lobster and sashimi station. Staff were attentive and helpful. We got bon bons and there was amazing cheeses and desserts. Overall it was a magical day, I thoroughly enjoyed it and would highly recommend.

We dined on a 3 course menu and all the dishes were just delicious. We had a complimentary glass of prosecco which went down very well. We started with very fresh oysters and ended with a very refreshing pear sorbet. The Beef Striploin was amazingly tender.
Will not hesitate to return.

Don't usually eat in hotel restaurants but this one is exceptional.
Limited to 3 choices on each course but that worked well with our dietary requirements.
The tuna and duck dishes were especially noteworthy and the theatre at dessert rounded off the evening wonderfully.

Is Sylvester's open Saturday evening? We were directed to the Three Bottle Man hotel bar. Non-existent service.
After half an hour, without having been able to order yet, we went to the tapas bar opposite where we had very friendly service.
We are Marriot Bonvoy members, and this is the first time we have seen this in this chain.

Not all it is made up to be - disappointing really - so I was happy to see a Resturant in the foyer of the Marriott however was very disappointed when my food arrived - prices like a Michelin Resturant with food I am sorry to say I could have made myself. Bland boring and too out there - was very disappointed - staff are attentive and helpful - however the menu options defy logic make no sense - it just didn’t work for me sorry won’t be back

The restaurant is located in the Marriott at the Quay. Very good buffet available for most meals as well as menu. If you are not staying at the hotel it can be very pricey.

Our buffet breakfast offers a great selection of fruits, cold dishes, hot dishes, cold cuts, pastries, bread and cereals and we are very happy to read that you have enjoyed these selection of products.
As you have mentioned, guests staying in house will be offered a reduced price of $30 per person instead of $42 when booking it in advance with our front office team.
