We were delighted to enjoy a fabulous meal at af Fermento in Darlinghurst. Opened by Giorgio Colosimo and Diego Mazza, from
Calabria and Milan, the Italian restaurant and wine bar is a lovely spot to enjoy some food and beverages. They also have a few nights with live music for your enjoyment.
On the menu, there’s small bites to eat; think house made breads, burrata, stuffed mushrooms or even an antipasto board. For some larger meals, why not try one of their pastas or their authentic pizza.
They take time and care to produce high quality food. We began with the eggplant parmy rolls which are slices of eggplant filled with buffalo cheese and topped with Napoli sauce, parmigiano, basil sauce and a balsamic reduction. Lovely flavourful parcels with a good cheese ooze!
We also loved the seared calamari - perfectly cooked with a nice hit of chilli with the Nduja and a bit of lemon. The portion was also generous for an entree.
We were recommended to order their signature freshly made prawn ravioli with lemon butter sauce, thyme and roasted pine nuts atop. The pasta was cooked perfectly and we really enjoyed this dish.
Giorgio and Diego are super proud of their pizza and spend hours and hours preparing and perfecting their dough to produce a nice and crispy base. We order the prosciutto pizza, with a twice cooked base and then topped with the fresh ingredients.
Given it’s a wine bar as well, there’s a great range of wines as well as some lovely cocktails and after dinner drinks. Ask the staff for their suggestions or opt for your favourite pairing for the food. We had a glass of wine and Prosecco to start and finished our dining experience with an Italian espresso
The hours of opening are extensive so it’s certainly a spot you can enjoy dining out and a good social catch up. Monday and Thursday evening, there is live music, so be sure to check out their socials to see who is on. We also think it’s great that they’ve teamed up with Darlo Bar to serve food there if you’re out for a pub night.

Our first time to Fermento - the food was delicious - fresh quality ingredients - and our waitress was the best. She knew all about each item on the menu and took the time to recommend what she thought we would like. A choice of small bites to share or individual plates and pizza. We also learnt there is music there on Monday and Thursday nights. We'll be back.

If you want to feel love in the air, this is the right place.... I love the vibes, the sensory food experience, the refinement of drinks and the cursed atmosphere. .
not to mention the staff . . friendly, kind and all beautiful!

We stumbled across this amazing restaurant and are so glad we did! From the get go the staff were incredibly attentive and the service was excellent. The vibe was great, the deco was very on theme. The food was absolutely delicious, we both had a pizza and they were incredibly light and fresh and you could tell were made from quality ingredients with lots of love and care. Would highly recommend!

We chanced upon this place a couple of weeks ago and made it there this past weekend. Excellent find. On the expensive side but food (and wine) and service and ambience are lovely and the food quality is very much worth the occasional splurge. I felt like I was back in some nice place in Trento. Scrigno del Duomo anyone?
We had the antipasto board (at the end), the outstanding seared calamari for starters, and the prawn ravioli and caprese next. All that with an excellent Pinot Nero from the Trentino region. Quite light and complemented the food well.
The family across the room had a pizza (among other things) and that is certainly something I'd like to try next time around; it looked delicioso.

A sweet little restaurant in every way. The vibe is lovely, the service impeccable, and the food...OMG! Not your typical Italian fare -- a limited and changing menu, absolutely delicious. So much care and attention went into the food, and the wine list was thoughtful. We will remember our evening at Fermento, thank you Diego and Marco!

Fermento is a VERY trusted and sober place the highest moral and service I have seen in MANY years! They made an error with my payment - and after a very nice and quick online chat they refunded my full payment and paid all the cost for a money wire to my bank account in Denmark!! Fantastic to meet such a high moral in 2022!!! I will come back for sure!! Thanks Diego for your business!!

Great food 10/10 homemade Italian pasta pizza best in town you will not be disappointed cozy quaint little place lovely selection of wines would visit again ordered the pasta special was yum and a pizza soooo good and a prawn ravioli dish we shared loved it 👌😜
