Great dining experience. The menu is based on Piedmontese food. We called to book and we communicated that one of us was vegetarian so a wonderful ad hoc tasting menu was prepared. We were enchanted by the ravioli stuffed with egg yolk and fondue. The staff is very kind and the service is impeccable. In addition, we were able to take our dog with us. Congratulations!

Two of us found this restaurant while researching places to go while we were staying in the Lange area. We made a reservation for a Sunday lunch well in advance and I'm glad we did. The restaurant was packed. We arrived and the great service was immediate - the staff were accommodating with our request to eat outside. They always had smiles on their faces. The meal is unique. They start with a local sparkling wine along with appetizers of meats and a cheese wrapped in a dough. Then came a cold plate of three appetizers, all of which were fresh and local (Russian salad and viletto tonnato plus a fish dish). Then a hot appetizer of an egg dish with bagna cauda sauce. This was my favorite. After that, we got a plin pasta. Excellent. Then another pasta, also excellent. Then our choice of a secondi (meat) dish - we had roast beef and it was thinly sliced and delicious. We were then given a choice of dessert. We also ordered a bottle of wine and cafe at the end. The price was more than reasonable - under 100 euro for the whole meal and drinks. The chef clearly put in a lot of care and thought to the meal. We walked away full and content. I would highly recommend this restaurant. The meal took about two hours so make sure to budget your time accordingly.

We had dinner in this place choosing the tasting menu which includes an aperitif, 4 starters, 2 first courses (tagliolini with butter and truffle, Venere rice with cheese fondue), second course (choice of roast beef, rabbit and cheese tasting) and dessert ( we chose the hazelnut mousse, very good). Adequate portions to enjoy the entire dinner. Each dish is a surprise in terms of balance of flavors and intensity. Impeccable service, always smiling waiter who explained each dish. Passing lunch during a trip in the torrid month of August: the place was marked, along the way, as a place with good value for money. It is called a trattoria but as soon as you get there you realize that it is instead a restaurant. The thing we really didn't like is the obligation to have to eat the full menu (price 33 EUR excluding drinks) which doesn't seem so little to us (we know many other trattorias in the area with lower prices). We do not like appetizers and being hot and traveling we asked to be able to skip them but we were told that appetizers were mandatory: at most we could then decide to take only a first course, a second course or move on to dessert. We therefore had no choice. The appetizers did not satisfy us at all except for the bellows with toma and salami (rabbit tuna ... to forget). Skipped the first courses (choice between raviolini del.plin butter and sage or tagliatelle with meat sauce) we took the roast (to choose between that and the chicken cacciatore) that was served, surprisingly, lying on a set of vegetables including peppers that we would not have chosen since we do not digest them and that gave their taste to the whole dish. Non penso esistano parametri oggettivi che permettano di discriminare in modo chiaro Trattorie e Ristoranti. Penso altresì che entrambe le forme di ristorazione siano in continuo mutamento, processo che ritengo naturale nonché indispensabile. Il nostro intento è quello di rendere contemporanea la storia centennale della mia Trattoria di famiglia. Mi dispiace che la presentazione del nostro menù sia stata percepita come un "obbligo"; se così fosse mi scuso a nome mio e di tutti i miei collaboratori. In merito al prezzo siamo felici che conosciate altri locali che riescono a proporre menù di qualità a costi inferiori, siamo altrettanto certi che conosciate molti altri locali con rapporti qualità-prezzo ben più sbilanciati. La nostra proposta permette di scegliere un menù degustazione oppure 2 portate all'interno del menù. Tale proposta se da una parte è dovuta ad una personale scelta organizzativa e di organico, dall'altra è figlia della tradizione culinaria piemontese che fa del "menù degustazione" un suo tratto distintivo. We stayed at osteria Salvetti for a family birthday: the place is very nice and quaint, we ate a menu of very good Piedmontese dishes, and drank wines chosen from an extensive list. The staff is of an exquisite kindness, and even our dog was treated very well! Highly recommended!

Loved this restaurant, where we were lucky to have been able to secure a table for 2 last minute. As we were staying in a B&B literally 2 minutes of walking distance, it was the obvious choice for us for our Friday night dinner. It's a cosy place, the food is great and absolutely delicious, the service is great. Highlights in the almost 7 course tasting menu were the starter cold meat cut and the ravioli. Everything was done well, and the quality of food was well shown in the fact, that even after all that food and being so full, we managed to sleep through the night without digestive issues... 😉 Definitely recommend this place.

Very nice place, nice. Very kind staff. The owner and cook, Mrs. Clelia, really beautiful. All wonderful, delicious. We were just arrived for lunch, without Reservation and greeted us with freshly made ravioli from her, unforgettable. Then two nights for dinner and we had a great time. 10 and praise.

I have eaten a number of times at the Salvetti restaurant in magical Paroldo, over more than a decade, and was fortunate enough to be entertained by the family in a private room. The famous international Slow Food organization was founded nearby in Piedmont, and they were often present at our dinners. I really can't speak highly enough of the Salvetti restaurant and family. They are kind, generous, gracious and expert when it comes to truffles and every sort of local delicacy. IF you are lucky enough to visit Paroldo, a hidden gem of the "Langhe" region, and perhaps even to experience one of its delightful "feste" -- like the enchanting "Estate di San Martino" -- be sure to have a dinner at the Trattoria Salvetti. And say hello from Francesca! Buon appetito!!

My husband and I visited Trattoria Salveti and we had no idea what to expect. What we got was a delightful welcome and an amazing waiter who described each dish in good English, which was very helpful to us English speaking folk. There was no menu he just kept bringing us course after course of delicious unqiue food. after course number 6, an amazing black rice and cheese dish, we were offered secondi plate but we were so full we jumped straight to dessert which was heavenly, I had chocolate mousse with rum and hubby had a crostada,a sort of peach cake. The service was excellent, the trattoria was simple and elegant, the food was excellent and the local wine of Barbera d Alba, chosen for us by the waiter was outstanding. The final delight was an orange version of a limoncello as a digestif, cannot wait to return.

Last day of a superb holiday: beautiful places in Torino and Langhe, great friends, lots of fun, some fantastic food and plenty of wine - anything else?! The last day was a bit of driving slog but I would highlight a visit to the small but interesting village of Moleto in Monferrato and especially a visit to Villa Ottolengh-Wedekind in Acqui Terme, an intriguing example of rationalistic architecture with an interesting history of wealth, adultery and decadence... - recommended. For our last dinner I chose Trattoria Salvetti as it featured highly in certain guides and it was a bit disappointing starting with the fixed menu which we didn't expect. Mind you, we had a lot to eat but... Anyway, starters were the usual vitello tonnato, a sort of pastry basket with porcini and potatoes (why?), the usual peppers with bagna caoda, nothing striking really. Then we had agnolotti and a (too) creamy risotto, again nothing memorable. R was really disappointed with his very dry roast beef, the rabbit rolatine were OK and the cheese was good. Even the puddings were far from spectacular, panna cotta and a chocolate cake, nothing to jump up and down for. Perhaps the positive of the evening was the discovery of a new red wine - Verduno Pelaverga - which I never heard of and was very good indeed. Don't know, Salvetti looks like a place which has seen better times and needs a bit of a rejuvenation. This concludes my Piedmont marathon so until next time.....

We ended up there by luck. Service, food and wine were great. All the family really enjoyed all the dishes. At first, we had local pastrami, salami, kids loved it so much that we could barely taste it (but that was awesome). Definitely a place to go if you are in this area!

Also a recommendation of OSTERIE d'Italie which we are happy to pass on. Without the tipp we would have neither gone to the village nor entered the place but luckily we have: we decided to go for the degustatione-menu. But there was also a smaller menu which consists of primi and secondi. Next to the great food the service was definitely a highlight.

Lovely little osteria! Very good food and great service. The menu is a chef's menu of the day. Very innovative for this small trattoria. The wine list is very decent too. We have now eaten here a few time over the last few years and this remand a favorite. Value for money is excellent. I think the meal costs @ 25 euros a head if I remember correctly. For the number of dishes, the quality of food and service this is a steal. The only complaint I had was that it was very warm inside the restaurant. This year has been an unusually warm summer. I think a fan or some form is ventilation is a must going forward. They have 2 tables outside, we didn't want to sit there as it's right on the square in Paroldo, however it's very quiet we noticed with no traffic so going forward this will be our choice in the summer.
