A common very brown bread in restaurants is the Swedish hard bread knäckebröd but if it was soft it could have been something called danish rågbröd (a little sweet)

It was limpa. But there are a lot of different types of limpa, depending on the restaurant. And I don’t like the limpa I find in the US nearly as much. It was great there!

They had vegetarian specials the evening we were there. Perhaps another restaurant would suit your needs.
