While the food was satisfactory, Chimera's wine holdings need to be reviewed. The first two wine selections from the current wine list were not available. Then when the waiter opened the third bottle selected, the cork broke. It was a poor start to the evening and considerably diminished the celebratory dinner.

The first visit on our first night in Trieste took us down a quiet pedestrian alley ... it was recommended by the hotel for a fine dining fish option. Entering a warm homely restaurant where the female maitre d' who described herself as the girlfriend of the chef who isthe owner welcomed you and was charming without being overbearing explaining... Situated in the old part of town, it is within walking distance of the main square and has indoor and outdoor seating. A fresh creative menu with wonderful and exceptional service. I ate here twice during my stay because there was such variety - and a special truffle menu in May. Fresh vegetables, excellent fish, yummy octopus. Nice presentation and... More

The clerk at the hotel recommended Chimera di Bacco as we wanted to walk from the hotel! What a terrific recommendation! Although we arrived before they opened the wine bar across the street with a fine selection of wines and A knowledgeable bar tender made our wait enjoyable! I think both establishments are under the same management. The staff was... More

Three couples, 250 Euros. This place gets 5 stars for decor, ambiance and service, but delivers mediocre food. Try the pasta with porcini and scallops, close your eyes and think Campbell's mushroom soup. A big disappointment on a special occasion.

Dear Guest, we are glad you enjoyed the place and the professional kindness of our staff , but we were puzzled while reading your review. Comparing one of our dishes to Campbell’s mushrooms soup shows poor understating of Italian gourmet food: maybe our restaurant was not the right choice for you. Decades of passion and professional dedication to high-quality food... More

This attractive little restaurant is located in a side street close to the Piazza dell 'Unita d'Italia, Trieste 's most important landmark. It is clearly very popular with local people because I only just got a table for lunch. The red wine and the service were excellent but my Cotoletta Milanese was somewhat overcooked which is why I am giving... More

Dear Guest, we are glad you enjoyed the location of the place; however, from the dish you refer to we understand you had your lunch at la Chimerina, which is in the same lane not far from the restaurant La Chimera di Bacco. Thanks for defining the place as “authentic”: all dishes are prepared with high-quality ingredients and presented with... More

The place is very nice in a tiny street in the heart of Trieste. It has several table outside which are very well decorated. The wine list is rich and the waiters were very knowledgable about it. Food is good and well presented. Price rather on the high side. Very good for romantic dinner. We were a group of 10... More

I can’t read my notes as to what we ate for starters and mains aside from an appetizer of cream of cannellini beans with marinated prawns in crispy salt and reduction of homemade apricot vinegar. Dessert was blueberries in ricotta and a plate of excellent cheeses from a local producer. Lovely meal with a nice bottle of L. Felluga Friulano... More

We waxed poetic about the meal, from the amuse bouche to the 2 starters (octopus, scallops.) Then, the pasta with black truffles. Swordfish and tuna mains were well-prepared. We elevated this meal to the best of our week-long trip...& then we waited & waited, finally flagging down a waiter. We had been forgotten for 25-30 minutes, offered no dessert menu... More

Chimera is in the heart of the old Ghetto but it isn't an ethnic restaurant, rather an original and creative establishment with an accent on the several influences Trieste has absorbed in the interesting course of its existence - Mediterranean as well as central European, Middle Eastern as well as alpine traditions are uniquely blended in an exciting menu, well...
