Sadly these days it is all too easy to be disappointed by French restaurants when travelling, even those with good reviews, but a much loved place with a very limited menu seemed like a good prospect for lunch when passing through Saumur and I am delighted to say that this did not disappoint at all. There is basically a choice of one dish - "as it says on the tin" and if you want something else you might be better looking elsewhere. They do offer a fish option and I have no doubt it is good and well prepared, but even the €5 supplement for this choice kind of hints that it is something they feel obliged to provide for those really adamant they will not eat meat but are accompanying fully signed up carnivores. Thankfully my wife and I are in that latter category and, while we might normally order fish at lunchtime, we both decided to go with the flow and were pleased that we did. The Rump steak was perfectly cooked and served with the titular Beurre Noisette which was very garlicky and salty - in some ways too much so, but in so many others just perfect. On a cold and wet miserable January day it was just the thing to warm the spirits and perfectly accompanied with a red Saumur by the glass. My wife had the steamed vegetables which were beautifully served and I had the frites, which were perfectly fine although not up to the standards of everything else (for those not passionate about really good frites you wouldn't understand). Desserts were also excellent - we didn't have an entree as we were not that hungry and the whole place really revolves around the signature dish (I didn't see any other diners choose the fish and the place was full).

Le Boeuf Noisette appears to do very little but it does it supremely well. It has a stylish interior and a few outside tables, highly recommended that customers book before going. The service was warm, engaging and efficient. The menu was limited but for good reason. Everything on it was done well; a couple of starters which change daily, the mains are the eponymous beef (sourced and cooked superbly) plus a fish and one more, the dessert list is a little longer. The style is modern French. The wine list (as you would expect in the Loire valley) is extensive and varied. Every town should have a restaurant like this; if it was near me, I would eat there every week.

A midday meal, menu declined in two or three courses or even four courses if you take the cheese, very short menu, the Rising Star dish here is hazelnut beef... There is a wild fish proposal in case or still. My choice of the day: the 2-course menu. A very fresh and tasty gazpacho with tomatoes, strawberries and goat cheese. Simple but perfectly executed and very good! As a dish, beef accompanied by hazelnut butter and mustard with pleurote. Very nice quality meat, perfect cooking and very regressive sauce. With these fries, very good and unlimited for foodies. Excellent Value for Award and very nice welcome too! A Trip Tip: book now, the restaurant is not very big!

I had high expectations for this restaurant after reading all the positive reviews but it ended up being disappointing. My starter of rabbit terrine was excellent but my wife’s dish with cold courgettes was odd. As for the beef it had flavour but was far far too chewy for me. I much prefer a more melt in the mouth style. Good selection of cheese but would have benefited from being out of the fridge longer

This very popular little restaurant has the simplest of menus, just two choices of starter and of main course. Most eat the beef. we had the home cooked pate de Lapin which was excellent and the beef which was superb. Nice deserts too and very good local wine. Good friendly service You must book, the evening we visited, well out of season, they turned away whole restaurant's worth of hopefuls.

We went for dinner at Bœuf Noisette in August 2021. This is a small restaurant with a limited menu, and that's a great thing : everything is fresh, and the dishes are exquisite in taste and presentation. Victor, the waiter is very welcoming and knowledgeable about their wines. The cook is a master in temperature for serving the meat. The highlight is the beef of course but the desserts were fantastic too. If there is one thing to note it is that dishes can take time to get to the table, so have good company and take a bottle of wine Booking ahead is essential. Highly recommended.

Booked this restaurant after reading reviews and wasn’t disappointed. Absolutely delicious beef, perfectly recommended wine choice & to die for chocolate mousse. My friend had the sea bass instead of beef and said it was equally delish. The perfect end to our short trip to the region. Will definitely be back!

Outstanding food, full stop. The rabbit terrine was both the best rabbit and the best terrine we've ever had. And the steak was outstanding. Service was a bit curt, but it was very busy, and the food (and wine) was worth every sou.

Great restaurant in Saumur with a very friendly and knowledgeable waiter. Menu is limited (main course was beef or fish) but we had the signature Boeuf Noisette and it was excellent. We thought it excellent value for money.

We visited on 22 February 2020. We received a very warm and friendly welcome. The young man who served us was extremely polite, helpful and very knowledgeable. The menu is small, but is all the better for that. Tasty starters. The steak was (rare) perfect and the butter sauce served with it was an inspiration. It was without doubt one of the best steaks we have eaten if not the best in France

Very difficult to rate here. The food was very good. The man was very good. Hospitable, helpful and wanted us to enjoy our meal. But my gosh, the girl serving is in the wrong job. As she blanked people and didn’t speak, it came to a head when she rolled her eyes at my partner as she asked for the bill in perfect French. Well my young friend you may not like customers, or wish to serve people, but we pay your wage. Sad really. Such a quirky different place. Tiny menu and huge wine list! Up our street. Ditch the girl! All she did was spoil the evening. Otherwise, great!

We loved our meal at Le Boeuf Noisette, make sure you book ahead as with distancing there aren’t many tables and you don’t want to be disappointed. The menu is simple yet well done. The cote de Boeuf was excellent and the buerre genuinely to die for. The service was friendly and relaxed, expect to enjoy a few hours here as good things come to those who wait.

We stayed on a Tuesday and were delighted this place was open. Booked to sit on the terrace. Were blessed with a lovely warm evening. The beef was amazing. As was the catch of the day. Carpaccio of tuna. Delicious puddings. Our best meal in France so far.

This was a simply fantastic restaurant. Quite understated from outside but the food and service is very high quality. Found the 'formules' to be good value. I would advise that if you have dietaries that you ring through in advance. Must go again!
