Lovely brunch today at Silo. The food is absolutely amazing. Great value for money considering the amount of time and work that goes into preparing each dish which includes local foraging by the chefs themselves. The chickpeas with the Babington leeks were delicious. Highly recommended.

Waited for 15 mins for drink order to be taken. Then when the drinks arrived they were the wrong drinks! We paid and waitress, then another member of staff ran after us down the street to tell us we hadn't paid......... And was quite rude...More

Another great meal , I should stop being surprised but this place always amazes me. They take a humble ingredient and do amazing things with it, and there never seems to be a dud . We will be back again

What a fantastic restaurant, really authentic yakitori and delicous sushi with a plentiful self serve buffet. A must try if you are visiting Brighton Five stars

This is a great restaurant for original ingredients and an important take on local everything. Great food but do not expect deep cushion seating.

It was good food on average, but a bite expensive (42 pounds for 7 small dishes without drinks and tips). I think the idea of no waste it is really nice, and you have to go there knowing this. It is a experience.

A pre-industrial food system... At Silo we choose to provide quality through purity, adopting a more primitive diet with techniques both modern and ancient. We choose food sources that respect the natural order, allowing ingredients to be themselves without unnecessary processing. By creating everything on site from its wholest form we can capture real food, and real food tastes better. Silo is designed from back to front, always with the bin in mind. The production of waste has been eliminated by simply choosing to trade directly with farmers, using re-usable delivery vessels and choosing local ingredients that themselves generated no waste. Our compost machine set inside Silo, turns all of our scraps and trimmings directly into a compost used to produce more food... Closing the loop.
