We visited Silo last night for the first time and thoroughly enjoyed our experience. I was originally left a bit unsure by some of the reviews I read on here, but I'm glad we booked and gave it a go. You do have to accept...More

Five of us went for dinner last night and almost all of us left every course which has never happened before. We had a set menu and the first course of blood pudding had the texture and taste of grit. The second course was just...More

The decor is industrial (but apparently more comfortable than it used to be), the mission is both to work at zero waste and to encourage us to do the same. The staff are friendly, well-informed, and dedicated to the cause (yes, they do forage for...More

Pollock and hispi cabbage an effective combination but lacked flavour. Beef well cooked and tasty, a bit chewy.Potatoes the best item, but local fir...More

I was attracted to this place by their zero waste policy which is such a good idea. However the food was really disappointing. You were encouraged to eat from the set menu at £45 per head. Although there were several dishes, each one was very...More

I tried the Silo dinner menu after really enjoying the cooked breakfast (which seems to be discontinued). I really liked that the staff were very happy to answer questions about the food, and obviously knew what they were talking about (no vague "it's just really...More

Stumbled across this place on probably one of the busiest weekends in Brighton during the year and what's the first thing you want, a greeting and service with a smile - we got both in spades - managed to get their last table. The menu...More

Description
A pre-industrial food system... At Silo we choose to provide quality through purity, adopting a more primitive diet with techniques both modern and ancient. We choose food sources that respect the natural order, allowing ingredients to be themselves without unnecessary processing. By creating everything on site from its wholest form we can capture real food, and real food tastes better. Silo is designed from back to front, always with the bin in mind. The production of waste has been eliminated by simply choosing to trade directly with farmers, using re-usable delivery vessels and choosing local ingredients that themselves generated no waste. Our compost machine set inside Silo, turns all of our scraps and trimmings directly into a compost used to produce more food... Closing the loop.
