Went there for the 1st time about 10 years ago. And always make it a point to go every time I'm in St. Maarten. Sometimes twice a week. It's that good. Have been there about a dozen times and always tell friends to try it.

Great food with a Mexican flair. A unique tropical ambiance. Attentive and friendly service. Generous portions and moderate prices. AND a lively bar! What more could you ask for in paradise?

We were not disappointed! The food was exceptional. The portion size was ample...there was no way, I could finish all of it. Always take constructive criticism to heart and was surprised by your comments regarding our ribs...immediately upon reading, looked for a solution and discovered our method had not been followed since we reopened due to our oven not working the first week...they continued boiling rather than slow-baking in the oven... Four adults ate at Jimbo's. Three had ribs and I had Mahi Mahi sandwich. All of us enjoyed our dinner. We also loved the ambiance. Listening to the waterfall and eating in an open air restaurant. I would eat here again.

We had reservations on Wednesday, 11/16 for 7pm. When we got there Jimbo's was in total darkness. We noticed other buildings in shopping center were also dark. We called yesterday and made reservation for 7pm tonight. For breakfast this morning we went to Zee Best, which is across from Jimbo's. We noticed work crew at Jimbo's cleaning floors. Then power... If you want below average Tex mex food and pay over average price then this is the place for you! I had the chicken quesadillas that were super salty my friend had the shrimp quesadilla same story. Went on the second night after being closed for 2 months. Food was ok...everything came out lukewarm. Had to send one dinner back to be heated more. Margaritas are very sweet and not much kick to them. Not sure it's worth all the bragging rights. Owner however was very nice and probably wasn't aware of issues at our table.
