The restaurant is located in the Episcopal Seminary of Conversano a beatiful historical building. The inside is rigorose and charming, large rooms with high stone vaults. We choose the tasting menu “Espressioni”. All the dishes we had in our menu were good but we were...never really surprised. Service was solicitous , smooth and knowledgeable. Good cellar. First time in a star restaurant we were charged for “coperto”, truly a fall in style.More

Let’s start this off by saying you walk into a restaurant that feels like either a small boutique hotel or someone’s house. Each room is designed differently as if you are sitting in the dining room area of your home (that is if your home...is this level fabulous). The service is impeccable and the food is to die for. Of course this type of place is perfect for those who are willing to try something different. Our highlights were the donkey tartare and pigeon. The pastas are our of this world and paired with good wine as well as, good company you cannot go wrong. Even the desserts were amazing! A truly undeniable amazing experience.More

The meal started well. The food was very good, but we walked out after 2 courses, because we were being served food without any of the wines that we ordered. We ordered champagne with our amuses. The wine list came late. We ordered a rare...Chablis. The first courses came before the wine. After waiting a while, and as the food was getting cold, we were told that they didn't have the Chablis that we ordered. We were presented two uninteresting and average quality Chablis wines. We rejected them, and proposed another higher quality wine from the list. It didn't come. At this point, most restaurants would have been offered something to drink. But, our table was neglected. We had to finish the first courses without anything to drink. After the first courses, we were told that the 2nd wine that we had proposed was not available. We were afraid that the food would keep coming without any wine. There were long delays between when we proposed a wine from the wine list, and when were were told that the wine was not available. The kitchen was sending courses before we could settle on a wine. If they had so few wines from the list, we could have given them a list to look for in the cellar, but we weren't given this option. Instead, their solution was for us to eat the food without wine. It made us very angry. We had to walk out after paying our bill.More

I was travelling on my own but made to feel very welcome,and indeed was introduced to the chef (the mother of the charming maitre d') The food of Puglia is very inventive as it makes the best of the agricultural produce of the region -...pasta, vegetables, fruits - and does not rely on heavy meat-based dishes. This reflects a previously impoverished region - meat was too expensive - but is now a very enjoyable style of cuisine. Everything is light, delicate and well-flavoured, beautifully presented. While this is not a vegetarian restaurant, the only meat on the tasting menu I enjoyed was the local spiral sausage.Lovely views over the main town square too if you have a window seat. Highly recommendMore

This was our 2nd most expensive meal in Puglia and not in our top 20. I just don't think Italy does fancy very well (and I personally prefer casual anyway) and Puglia is the ultimate in casual dining. My family and I did enjoy a...few of the dishes but I would pass hereMore

From start to finish an excellent experience. The setting is lovely in the stone vaulted dining rooms. A warm welcome from the maitre’d, the chef and the owner. The service was attentive comfortable and professional in every way. The food on the tasting menu was...creative and made inventive use of local ingredients. Excellent wines and perfect pacing of a very fine meal. Could not have been more enjoyable. Complimenti a tutti!More

Pasha is a true Michelin One Star Gem. Elegant service without bring overbearing. Excellent ala cart menu as well as tasting menus. Diverse and reasonably priced wine list. AND food preparation, taste, flavor and presentation one would expect. If your in the area it’s worth...a stop for sure.More

What a fantastic restaurant Pasha is, FIVE STAR all the way ! You would never expect to find such a superb establishment like this in the middle of a small town, its what you expect to see in Milan, Rome or London. From the moment...you walk in until the second you leave, the service is simply brilliant, some of the best staff we have ever come across in any restaurant anywhere in the world The food & wine is such great quality & prices very reasonable for the quality and service. We had one of the two tasting menu's on offer with local wine pairing , every course was very different and reflected local in season fresh ingredients with great imagination . If you are in the Puglia region this is a 100% MUST GO TO restaurant .More
