Our wine educators will guide you through the process of selecting and blending different varietals to create a wine that perfectly suits your taste. Along the way, you’ll learn about the characteristics of different grapes and how they contribute to the final product. Once you’ve created your blend, you'll bottle it and take it home with you as a one-of-a-kind souvenir of your experience. And of course, you’ll also get to enjoy a glass or two of your creation as you work. Electric vehicle charging available whilst you enjoy your tasting.

Set on the crest of a hill, the cellar door has 360-degree views of the picturesque patchwork of vines and paddocks of the Hunter Valley. The sandstone and timber building tips its hat to the history of the vineyard. The Wilkinson's were true pioneers of the Australian winemaking industry. Despite two earlier ventures in Australia, the Wilkinson family returned after the brothers Frederick and John had studied winemaking in France and Germany. In 1866 the family acquired the present site of the Audrey Wilkinson vineyard. Living in tents, they cleared the land and planted vines which were sourced from the MacArthur Onslow property. By the early 1900s, Audrey Wilkinson collected awards around Australia for his Hock, claret and fortified wines. Large quantities were exported to London. Audrey committed to leading edge technology which, at the end of the 19th century, included open cement fermenters and steam powered crushers and hoppers. It was here the Audrey Wilkinson legacy was born.

Peterson House is the first stop often taken when visiting the Hunter Valley vineyards. Located at the gateway of the Hunter, the picturesque property is home to the largest array of sparkling wines in the region.​ Our Cellar Door boasts over 40 varieties of red and white sparkling wine to taste, plus we have a wide range of souvenirs inspired by our motto ... “Life’s Flat Without Bubbles”.

Mid-2020 saw the inception of Hope Distillery launching with a range of premium Australian grain spirits including Gin, Vodka and Moonshine.
