This place is great. Lodging, meals, staff. Everything was fabulous...Location, the food, the staff can not be beat. We stayed a week and went on a different adventure everyday, caves ruins, river trips. We had a blast!!!

If you read my review you will see that even when it's really hot (105+ degrees when we arrived) you will be reasonably comfortable without air conditioning. In January you will have no problem.

Xunantunich is a Mayan ruin that is quite close. You can get there by car or on horseback. I didn't do caving but I don't think it's very terrifying if you're claustrophobic. Can't make any weather predictions - sorry
