Was booked in to a room in the old wing. Upon arrival late in the evening, and the room being found to be not habitable, the front desk immediately upgraded me free to a suite in the new-wing. This is empowered staff.

Jaffa is closer by far than Jerusalem from where you will be. You would certainly be able to enjoy Old Jaffa in a half day. In my opinion you would need to be able you commit an entire day for Jerusalem.
