Stayed 1 night in the Pet Friendly Cottage. We were there to experience the Restaurant and to enjoy the comforts of Stillwater. It certainly did not disappoint.
The Cottage is attached to the main restaurant and accomodation and has a lovely little fenced courtyard overlooking the carpark , park and water. Great for small to medium dogs however may not be suitable for really big dogs. There is a lovely tiled entrance where your pooch can sleep that has water and food bowls and a bed included. It really is pet friendly.
The room itself is lovely. A small table and chairs to have that drink overlooking the river , the best Mini Bar with cheeses, crackers, chocolates, really everything you could need. They do bring you a complimentary drink on arrival and a artisan bread loaf with Tasmanian butter - delicious. The bathroom is huge and really modern. Food from the restaurant can be delivered to your room. We dined at the restaurant and enjoyed a lovely meal and had dessert sent to our room just so we could spend some time with our pooch. There is a lovely park opposite for doggy walks and only 5 mins walk to Penny Royal World. The staff were so lovely and really make you all, including your pet feel very welcome. We will return and would not have any other room other than the cottage (even if we didnt have a pet).
The other rooms are actually in the hotel/restaurant area and the cottage is more private. Highly recommend Stillwater and thank you for a lovely stay.

Elegant rooms in converted mill. The rooms are very comfortable and quiet even though they are near a busy road we did not hear any noise and had a wonderful nights sleep
Well stocked minibar.
We also had a wonderful diner included in the package that was delicious

Our first night on this trip to Tasmania will always be unforgettable thanks to Stillwater Seven. The dinner and breakfast were huge contributing factors but I’ll review the restaurant separately.
There were so many aspects where expectations were met or exceeded but the mains points are:
THE most beautiful drinks cabinet/mini bar/larder/buffet cabinet - we want one for our home!!! They have put together the most amazing selection of goodies. We are not mini bar users ... but you just cannot go by this one. It sucks you in! It does rather render the communal lounge/honesty bar area a bit useless though, since the rooms are beautifully stocked.
The wallaby and pepper salami in the aforementioned minibar: Smooth and gorgeous! We accept some might not sign up for wallaby but if you are curious, have the packet from the larder with the fresh bread provided and a glass of something as you gaze out over the water.
Great music selection on the Tele and jazz was playing on arrival just as requested ...
Wonderful pressure in the shower - commendable in and old building.

Love the touch of the old school crystal water glasses.
For the entry level room, which we took simply because our itinerary only allowed one night before travelling onwards, we felt the size was perfectly adequate. Despite the high ceiling it stayed warm and cosy.
The restaurant - it just shone, both food and personnel wise. Simply stunning. Beautiful views at breakfast, as the photo will show.

This was a fantastic find, this boutique hotel oozes history from the old flour mill in its bones. The exposed beams and pipes add to the feel you are staying somewhere special. The personalised service from the moment you arrive was outstanding, loved the freshly baked bread and soft butter daily. The room was very comfortable, spacious and with a great view. The shower had great water flow and the bathtub was excellent and comfortable to laze in. Breakfast was included and was superb with excellent coffee. Had a really great stay and would come back at the drop of a hat!

Arriving late on a Saturday night after driving from the dock for the Spirit of Tasmania to Stillwater was a much needed and delightful surprise.
The staff were waiting for us; unloaded and carried our baggage up to our room, offered us drinks and had charcuterie board of the fresh baked bread, cheeses, olives, cold cuts set up knowing we hadn't eaten dinner!
The room was spacious and beautifully decorated in contemporary decor, with a large bathroom, king size bed, end tables, small table with 2 chairs and a view of the river.
Stillwater Seven has elegance, refinement, comfort and service nailed! It's across from the most beautiful place in the area; the Gorge walk.... stunning and our breakfast included was anything off the menu in a well deserved busy restaurant. Can't recommend this enough!

Even before we arrived we knew Stillwater Seven was going to be an experience like no other...the welcome email was just a glimpse of the genuine hospitality that awaited us....magnificent attention to detail and genuine care of their guests, is something that sets this former flour mill turned luxurious seven room hotel, (sitting above a world class restaurant), far ahead of the rest. Local pride is evident in every detail, such as locally sourced wines, carefully recommended by the wonderful staff, the abundance of delicious fresh produce, beautifully curated artwork throughout AND the most exquisite hand crafted timber larder pantry (aka mini bar) in every room. We have never enjoyed a dining experience quite like the Stillwater cuisine, and believe that Chris and his friendly, knowledgeable team have absolutely created a gourmet getaway experience unlike anything other!! Congratulations to everyone at Stillwater Seven for a truely exceptional getaway! Thank you for making us feel so welcome, we will be back!

Book early as there’s only seven rooms. However once you’re organised enjoy the anticipation of a stay to remember. On first blush, the room rate may seem expensive, but it is absolutely worth it. Everything is spot on.
Converting the top floor of an historic mill, into luxury accommodation has been executed to a very high spec, beautifully designed. It’s great to see they’ve supported their local businesses in Launceston where the beds, blankets, bathroom products, gourmet foods & wines etc all sourced locally.
Chris and his team provide such friendly and helpful service, take advantage of their great local knowledge.
Lovely touches like the daily delivered sourdough loaves with local butter are a winner. The included breakfast each morning is without doubt the best hotel breakky we’ve ever had. The house made granola is next level. Great central location adjacent to Cataract Gorge makes for lovely walks to help burn off breakky. Stillwater for lunch and/or dinner is an absolute must.
Our only regret is we should have stayed for more than 3 nites. We will definitely be back.

Excellent luxury stay, our Room 2 is facing directly the River, yes, it is very calm and still most of the time. The room is very comfortable, huge bed, walk in powerful shower, the lighting is a bit on the mood lighting and may be hard to read at night. TV has free Netflix, we finished watching The Crown there. There is plenty of delicious local produce in the room, we sometimes just have dinner in the room. There is a bar outside the rooms that you can get the food you want and just mark them on the note for billing. Parking is ample, breakfast is held in the restaurant and is delicious and the host is always very helpful, he is also there at night for the dinner session. It is just 15 minute walk to Cataract Gorge, the scene is stunning, like miles away from civilisation. The hotel is within waking distance to all the major eateries, there is no need drive in town unless you plan to venture out to the country side. We were picked up by Tesla 4WD at the airport, everything is seamless. We definitely will come back.

If you want to feel like you're the only two people that matter in the world, this is the place for you. From arrival (and even before) to departure, the service and thoughtful touches are all designed to make you feel extremely special.
We stayed in Suite 1 and it was the perfect place to enjoy our breakfast on both mornings - given how amazing the service was in the restaurant (whilst all staff were amazing...a special shoutout to our waitress... unfortunately we are hopeless with names but she had a little five month old at home), it was a tough call to stay in our room, but the table by the window and incredibly comfortable chairs was too tempting.
The bath in Suite 1 is perfectly sized for two, and the pantry has everything you need.
Now let's talk about the daily sourdough you receive...OMG. Never thought I'd mention that in an accommodation review!

This restaurant with rooms has a great location near the water in Launceston. We had a courtyard room which was lovely, we had our own little courtyard we could sit out in. the room is well equipped and they do their research to ensure they make it as comfortable as possible for you. There was a large bathroom/wet room too. Very well equipped bar in the room.
