The hotel is a mix of 3 and 4 star rooms, which can be quite different. Even in the 4-star wing, they have (standard) superior rooms (an oxymoron if there was one) and what looked like an upgraded variety (plusher, with more modern furnishings).
We stayed in a (standard) superior room: fairly large, clean, well maintained. The toliets were good (finally an exhaust in a European hotel that audibly starts working as soon as the light is switched on!). The beds were a bit soft for our liking, but I believe they are the same in all room types. The air conditioning (split air conditioners in every room) worked a little too well.
The Reception staff are multi-lingual and very helpful.
The breakfast was impressive, in a huge, modern room with a full German spread and prompt replenishments with typical German efficiency. The full gamut of breads, teas, hams and a hot section with Nuremberg sausages, pancakes and the like. There was a live counter for eggs too, but the lady at the counter looked very, very uninterested in making them; a little friendliness-training wouldn't be out of place, as she was almost shouted at by a few German guests).
The hotel has a couple of local restaurants in the premises, which serve steaks and typical Franconian cuisine - all excellent quality, with very friendly serving staff. The local beer was good but not chilled enough. The pork shank (a local special the way it is made) was one of the best we'd tasted in Germany. Surprisingly, even the fish was good. A few chicken dishes may have helped. There were options for children too, and lots of flexibility.
Parking's free behind the hotel (their private area shared with a few neighbours), plenty of space.
A mid-size shopping mall is a 6 minute easy walk-this houses a huge Kaufland department store.
The hotel is located just next to the Gallows Gate, one of the 6 gates to the city. It was a pleasure climbing the city walls so easily and walking back from the old city.
Overall a lovely experience-we wouldn't look anywhere else to stay when we're back next.

We can only recommend it!

The check-in was very friendly, everything worth knowing was explained by the nice lady at the reception.
The room was very simple, the bathroom very small. Unfortunately, the quality of sleep was significantly impaired by the bad mattress (personal opinion). We booked a comfort room (for the tour), so we expected a little more.
Importantly, everything was very clean.
It is worth mentioning that the room is in the annex building, i.e.
walking across the parking lot to the main building for breakfast is no problem when the weather is nice and dry.
The breakfast was good, large selection of food and drinks, unfortunately we and other guests had to clear the previous guest's table ourselves, probably due to the lack of staff.
The location is very good, you are in the center of the action in just a few minutes.

I gave service two stars because I found some things a bit old fashioned; they have a sauna but you have to pay extra to use it. There are charging facilities for your electric car but to use it you have to pay the hotel € 30 just to switch it on… Why not add a little to the room charge and offer your services free of charge? That is the way I think a modern hotel should go forward.
The bathroom was rely tiny and basic! You can be in there with one at a time, be careful not to bump in to stuff! For a four star hotel it could have been a bit more luxurious. There is a shower that was oké. The beds were nice, great breakfast and the hotel was clean and quiet. A good stopover on our way to the Alps but the hotel has a bit more to offer if they change some of the policies!

It was the only place we stayed in Germany with poor service. The breakfast staff only had 2/3 tables to look after but they were so bored. I think maybe this Hotel needs to close down in low season so the staff can come back a bit refreshed.
We would not stay here again.
